I just made these today for my Celiac husband's birthday. He hasn't had chicken balls probably in almost a decade. It was a bit of a science experiment that I based off of this video, but it worked! I made my own "all-purpose" gluten free flour mix with a combination of rice flour, starch, powered milk, and xanthan gum. Then I converted it to be self rising flour by adding baking powder and salt. Then for deep frying, I added a tiny amount of amylase enzyme because that helps to keep too much oil from being absorbed into deep fried goods (I read a study on it a while back). Because gluten free deep fried goods tend to get darker faster, I added some food grade gypsum (calcium sulphate). My whole family (husband, four kids) devoured them. Thanks!

There was an all you can eat Chinese restaurant / takeaway in my town that had the best chicken balls. I've tried other places, and they have never hit that high. They went under new ownership a few years ago and haven't been the same since... Using this recipe, they tasted identical. I used a thick batter with lots of black pepper. It turned out perfect! Thanks!

Cooked my 1st batch of chicken balls last night. Wow, exactly the same taste as the take-away. So easy to make. Made this the other day! Came out great! Only downside is I had to substitute and make my own self rising flour. Still worked great! Just a note: green dragon self rising flour is $195.00 CAD for 1.5 kilograms. I don't think I will be purchasing that flour ever. Recipe is great, will make again.

Late reply but you can re use the oil 3-5 times just put it through a sieve and a bit of cheesecloth and put it straight back in the bottle, and to dispose just put it back in the bottle and put it in the bin, as long as its sealed. Could wrap it up if you feel it might spill 👍

ok so i made this after watching your tutorial and i wanted to say THANK YOU. all the tips and tricks really helped with the cooking of the chicken balls. I made them but i did make a few tweaks because i couldn't order your flour but will try to in the future but i used flour and baking powders and instead of the MSG i used paprika and onion powder. All in all though this was the easiest tutuorial I could find and you explain it so wonderfully both of you. Your ma is right as well about banter if you can do something then take advantage you never know when you could lose the ability. GOD BLESS you both, you've saved my pockets. This was better than my local take away

Nice one guys! I’ve been doing my own variation for a few months now and love them. I put the chicken in a zip lock bag and add white pepper, salt, msg - but also add a couple of tsp Mirin and a little splash of sesame oil. Put that in the fridge for an hour. I then add two heaped tablespoons of cornflour to the chicken in the bag and shake it around to coat - saves the messy hands. For the batter I also season it with white pepper, salt and msg. Heat the oil to about 145 degrees ( I use a digital thermometer I got on eBay for a couple of £) and fry for about 7 mins. I serve with curry sauce and love them. Ps - good luck with the Op!

Michael David sorry, just saw this comment. I basically slice two chicken breasts and stick them in a zip lock bag, add about 0.5tsp salt, 1 tsp white pepper, 0.5tsp MSG, roughly 2tsp Mirin and roughly 2tsp sesame oil (I don’t measure sorry, I just splash in the Mirin and oil, but it’s not a lot. Massage into the chicken and stick in the fridge for an hour or so. For the batter I use 6 really heaped tbsp Of self raising flour, 1.5 tsp of white pepper, 1tsp Of salt, 0.75 tsp Of MSG and mix in cold water until I get a batter roughly the consistency of double cream (looks about 300-400 ml of water). Take your chicken out the fridge and add two heaped tbsp of cornflour, shake around the bag to coat the chicken. Then dip the chicken in the batter using a cocktail stick to dip it in your hot oil. Works for me every time and matches the style the Chinese takeaways do in my area

OMG this channel is great fun and you two work brilliantly together! Stumbled across you when searching on how to cook fried rice following a new year visit to my local asian supermarket. The sort of visit where I don't know what 90% of the stock is so just stick with noodles, some spices and curry paste! Think I'll be paying another visit to them shortly. On your website have you thought of doing a starter box of ingredients to cook a few of the most popular dishes and/or an easy way of selecting a dish/recipe and have the ingredients added to your basket? I wouldn't be surprised if you're snapped up by some tv producers as I think we need some new faces on tv cookery shows and I can easily see you guys having a series. Don't give up youtube though we need you here as well ;-)

Sometimes you don't need to do a video on cooking, if you're recovering, don't damage your hand just trying to show us. We'll be happy with a simple Q&A on general running of a takeaway, learning new stuff, problem customer stories etc It's all good. Even just a minutes long video to tell us how your mum is doing, er how you're doing.. all live streamed, or pre-recorded - probably need to record two now, one to tell us you're ok and your hand is healing well, and another to say your hand has fallen off ha ha :) If you really struggle with it, can we have a little fun session with your mum learning us some words. Thanks for the videos, they're awesome.

They are so cheerful. I like them two. I watched and try at least 10 chicken ball recipe cause my partner love them. I am more of a dumpling person. If i manage to do some acceptable chicken balls i could avoid 30 pound a week of takeaway

Kitty, it's just a flavour enhancer, however so is salt and pepper. You don't need to use it at all. The recipe will have the same texture and result without. It does nothing to the cooking process at all so no need to worry.

Good luck with the surgery. At one time if I bought Chinese it would always be Sweet and Sour Chicken Balls and Chips. I am glad to say I now eat other things including Sweet and Sour Pork Balls or Sweet and Sour Cantonese style. But eat more things like Chow Mein.

Was a chef for 20 plus years,however you cannot beat a good takeaway every now and then.Ive made chicken balls,just with the ingredients I had in a standard cupboard,so no msg,fine Sr flour and they are loved by all.I add chilli powder and finely chopped chilli into the batter for an extra kick.Your right about the texture differences in the flour.If your using standard Sr flour a looser batter helps stop it being mushy on the inside.Great work and thankyou for the entertainment.

Great video very helpful and your mum is lovely! I'm going to make them tonight. Just thought I'd let you know though, it's a bad idea to deep fry in a non stick pan coz it destroys the non stick coating

Been deep frying in them for years, I think most people use metal utensils so that wrecks them, ours have never not lasted :)
