Those chips look so, so good. I wish I could have tried them when you were still making them. For frozen chips I do the method where you drop them straight in water for a minute out of the freezer then pour the water off, put them in a box with a lid and shake the hell out of them. This roughs up just the outside and gets you that lovely glassy outside if you do the rest right. Not as good as this but enough to make you go they'll do.

The funny thing is, as you was describing the lengthy process you used to use to produce these chips, I thought to myself this is top restaurant quality food. This looks amazing. Here is a much quicker and waste line destroying way of doing it. Use frozen chunky chips and make Battered salt & chilli chips.

I'm pretty grateful you taught me how to make a beef curry takeaway style it's took a few years and a bit of experimentation but I'm pretty sure mine are now superior to any of my local Chineses. Granted I still have to visit my local Chinese supermarket but the way prices have went crazy I think I can make a better meal than the best local takeaway for probably a quarter of the price.

This is a fantastic episode. I take trouble over chips. I have been making chips ( as a very occasional treat) using beef tallow and doing some stages similar to yours. My OH says they taste like genuine fish and chip shop chips.

I know exactly how long and time consuming this process is. I remember helping with the prep of these types of chips back in my chef days. Thankfully portion size was normally 6-10 big chips per serving - this was in a restaurant of course lol. I'm guessing your portions would be larger and rightly so run out quicker. But they are still a delicious way of cooking chips. £2.40-£3 a portion of chips is not to bad a price seeing a lot of takeaways are now charge more - but I guess it depends on portion size.

You're doing chips wrong. I cook one chip per day, takes 17 hours to prepare one chip. I cook them 19 times each and stay up all night watching each individual one to check on the progress. My chips are expensive, don't come to my restaurant which I don't even have. But when I do, I'm gonna be rich!

I wouldn't use the water from the boiled mushrooms .. Shop bought mushrooms aren't the cleanest So I'll stick to fresh clean cold water to make my curry . Say all this, your curry looked very tasty 😋
