Yeah making Chinese cookery videos would be the dream (very very unlikely, but still would be awesome), were tired of doing 12-14 hours a day 7 days a week off season and 16 hours a day during the summer.

In Swansea, it’s rice, peas, chopped chicken, pork, small prawns and sometimes spam throughout the rice. Then chicken and pork slices on top with BBQ sauce. No mushroom, onion or beansprouts. Interesting how it changes throughout the UK!

Yeah it is, we've done another video called special fried rice which is similar to what you explained, most places have both on the menu, this is normal know as house special or have the takeaway name in front of if like "jade garden" fried rice, while on the same menu special fried rice is the one you described:)

Hi chin, Amazing. I will add this to my "to do" list. Tonight i cooked Malaysian special curry (i call it special because it was chicken, beef and prawn) I followed all your tips from your beef curry recipe, i have to say it was amazing, as good as take away. Your channel is fantastic, next on my agenda is beef with tomatoes, with chicken toast for starter, but i adore special fried rice. I have actually yet to try making fried rice, i havnt tried yet since I subbed to you, but every attempt before that wasn't too good. Im pretty sure now im a lot more confident around the stove i can manage it. Thanks 👍

Thanks for doing my request. It's completely different from what I get here in East Yorkshire. The meat and prawns are cooked with the rice and there's no bean sprouts or sauce. An interesting variation.

We have a special fried rice here which is totally different, this is like a dish that's normally called the shop name then special, so "hard garden special fried rice" then special fried rice would be a totally different dish

Just came across your channel, absolutely love it & keep it up. And your mum is delightful. Going back to what you said about or rather your mum about the '70s etc our local Chinese made chips that were all big & grooved on all sides which no one had ever seen, I have always wondered how they would have done that because a chipper would not be able to make a 3d chip so to speak.

Hi Chin and Choo, around here ‘Up norf that would class as egg fried rice with special chop suey. The house special fried rice dish is basically a bog standard special fried rice with sliced mixed meats and prawn. Some also put a sauce on top. So when the Somerset takeaways do this do they do it as a one container dish? Very interesting and as always top drawer. Xx

No it comes in a large round contianer, we have special fried rice too, which is meats chopped up and fried with the rice. Normally this is called the name of the takeaway followed but special fried rice for example "jade garden special fried rice" xx

Hi Chin - thanks for another amazing video! I know you have a wish list as long as two arms but can I add the bright red "sweet n sour" dipping sauce which accompanies deep fried chicken balls in any takeaway. It always tastes the same everywhere so I guess it's a simple mix of vinegar, sugar, water and OK sauce (plus red colour) but would love confirmation of ingredients and ratios! Thanks

The sweet and sour sauce is just sweet and sour sauce, it's held in a bainmaier and laddeled out as and when needed, I don't know anywhere that uses OK sauce for a sweet and sour base but only 1 person has said that to ever and that was a takeaway owner on here, all the other 100s of people I know who own takeaways make it similarly to the sweet and sour we posted as our 1st video.

I forgot to say ratios of everything are different everywhere you go, because each I need thinks they know best and there's is the best recipe, I actually seen it cause arguments 😂😂but it's all the same basic ingredients.

I was under the misapprehension that the video you posted was the "posh" version for main dishes and there was also a simple version which goes with chicken balls. Mainly I suppose because the stuff with the chicken balls is always so bright red!

@@PVflying Yeah it's all the same base sweet and sour, when it's used in Hong Kong style etc it has dark soy added which really changes the colour profile, hope this helps :)

Anyone else Hungry? very nice - Pro-Tip regarding the pre-cook Brandy preparation - Brandy to me is harsh Whiskey but if you mix half Roses' Lime cordial with half Brandy you have the ultimate Night out pre-loader. You can taste and importantly feel the warm glow of the Brandy but the sour Lime makes it super smooth and warm - Anyways lets get back to the cooking! more pro-tips please

Quick question, as think I know where I may be going wrong. The msg, do you put it on the Base of the pan to brown and then stir? I sprinkle mine over all the ingredients and then stir.

Ether way works, if you have a lot of heat then over the top is fine, but of your cooker isn't the hottest, try to find some space on the actually pan to brown it.

We do Malaysian chinese street food now, stopped takeaways afew years ago because it was so hard to make good food at the price people would pay for it. And we have 2 place one in porlock wier and one in porlock main town, we sell out in both places often :)

You don't need to if you follow our recipes, Ok sauce us used as a quick and cheap way to sauce. HP sauce mixed with tomato ketchup and Worcestershire sauce is a good substitute, ratio is 4:4:1

We have that dish to what you described called special fried rice, this is house special, which is different, normainly it's not called house special on menus it's called the name of the takeaway with special fried rice after it, so for example "jade garden special fried rice" and then special fried rice would be on the menu, but would be a completely different dish 😊

High quality prawns, there very expensive and it's the only thing Chinese takeaways don't skimp on. Cheap poor quality prawns always shrink loads

@@Matt463634 this is a myth, we leave them on as we eat them, cuting the tissue down the back causes liquid to seap out quickly, no moister is really lost when tails are on or off :) unless you do a half shell which leaves a small amount of shell on round the base (which we don't do)

as you see it at the end it starts to thin while we are eating it, this is due to the moister in the bean sprouts and veg, if you don't thicken it within minutes it just becomes water, but if you like watery sauce then don't thicken it. simples
