My wife cans and she makes Zuchinni Relish that is to die for. We put it on our pinto and white beans and we use it in macaroni salad, chicken salad and just about anything that requires some kind of relish. She usually makes 2 batches per year. This year she started out by making a double batch. She is the best. I going to introduce her to your scones recipe. She has not been well as of late but hopefully she will get to feeling better soon. She is recovering from cancer but praise the Lord, she is cancer free today.

I'm with you on the hay! What I do before it goes in garden is to let the chickens at it first. They get all the seeds that I don't want in the garden!!

Was watching your video and then realized what your t shirt said! Mari Vineyards! We visited it a few yrs ago as we are huge Curse of Oak Island fans and know one of the brothers owns it. It is an amazing place to go! As for zucchini, I have a huge 30 X 30 ft raised bed garden and grew it for the 1st time last yr and got lots and loved it! So this yr, I decided to grow a lot more and I have tons so I was looking for other ways to use it as you can only have so much zucchini bread in the freezer! I am making your relish recipe now and can't wait to try these scones and the jam! Thank you for all you do to bring these ideas and recipes to us! I look forward to watching many more videos!

We have the same stove!! I love mine. We converted our downstairs to gas and my sweet husband said, "Let's go ahead and get a gas cook stove-I know you really want one." (I love that man!!) I find myself enjoying cooking and canning so much more than before. Thank you for all the wonderful ideas to do with zucchini!! I've never made scones, but now I want to. Zucchini chips. Very thin slices and use your favorite salt when they come out of the oven. Yummy. These scones look great! Oh, and you can make pickle with them using your favorite brine recipe.

I bought a vadalia chopper last year. I used it to chop zucchini on the small chop. I spread them out on a cookie sheet and put them in the freezer for about an hour. I bagged them up and put them back in the freezer. They froze loose if you know what I mean. Anyway whenever I need some from a soup or whatever I just grab a handful. I dehydrated some also on the same small chop and use those in salads

I make egg scramble with zucc, I put garlic flavored ghee in non stick pan, add zucc, green onions, peppers (all from garden) AND a few pieces of crumbled bacon from a previous breakfast (yeah the dog didn't get it this time), let the juices fry out a little bit (saute for about 15 minutes), scramble eggs with some cream, add to the pan and put some chedder and parmasean cheese in it, let it bubble, cook up a bit, put a lid over it, turn off heat. Give it about 10 minutes for the flavors to mix and everything to cool down. I use salt and pepper in the vegtable mix to help season, and a sprinkle of nutritional yeast for flavor. It'll carry you through to late lunch or dinner, it is so good. You can use yellow squash as a substitute, I don't peel the squash.

this year was too cold and wet here. my plants didn't grow and then the squash bugs got most of them. I got 2 small zukinni and then the plants died. Well I still have some from last year. I guess I will use that. looks like a yummy recipe. Thanks for the idea.

my Daughter makes a chocolate cake with zucchini in it..What about putting zucchini in a Sausage breakfast baked casserole. Just salt & drain it. I think it would work.. Loving these recipes. GOD BLESS

Hey Rachel! I know this video was months ago, but if you see this comment I was wondering how freezing these went and if they were good after. Or if freezing the zucchini and making them fresh would work better. I would like to try this as a way to use up my summer harvest.

Freezing them has been a wonderful treat, I just take what I need out throw in microwave for a bit and they honestly taste just as good as the day I made them. I work full time so time to come home and makes scones in time for dinner isn't a luxury I have. I do have tons of shredded zucchini frozen so I can make more when needed.
