In Bulgarian cuisine, a traditional kebab is often made with spicy sauce.
Rarely the kebab is made on a skewer as is traditional in Arabic cuisine.
In this video I show a unique kebab prepared with vegetables and baked in a clay pot.
This is a special dish for special holidays.
✰THE RECIPE: ☞
1 kg. lamb meat - shoulder or leg
20 mushrooms - 250 grams
2 onions
Green onions - 4 stalks
Green garlic - 2 stalks
2 large potatoes - 200 g.
4 sprigs of parsley
1 sprig of mint (1 tsp dried)
1 sprig of savory (1/2 teaspoon dried)
1-2 teaspoons of salt
2 teaspoons of paprika
10 grains of black pepper
4 tbsp. of oil
2-3 hot peppers
for thickening:
120 ml. red wine - Bulgarian Mavrud or Cabernet Sauvignon
200 grams of tomatoes
30 grams of butter
1 tbsp. of flour
