1.5 cups of water is presumably around 360g. Together with 420g of flour, that gives a hydration level of around 85%, which is commensurate with a focaccia or some other very wet dough recipe. What's confusing me is how that can then be readily kneaded by hand as depicted here. What am I missing here?! Thanks!

My Cinnamon bagels came out not as great as store bought......I used 500 grams of All Trumps flour,300 grams of warm water,10 grams of Salt,3 grams of Yeast,10 grams of Sugar,oil and 20 grams of Cinnamon and Malt Barley in water........Just don't taste great, no taste of Cinnamon........Wonder did I put too much Cinnamon?Or maybe I should add Brown sugar also?

Is it alright to use self rising flour
@michaelboschcooking2 ай бұрын
Yes you could use self rising flour just leave out the baking powder baking soda and salt. Make sure the self rising flour you use does have salt in the mixture if so leave out the salt in this recipe. Thank you for watching my video I really appreciate it

Will you need to burp the drink because it's fermenting, or is the alcohol just soaking into the charges and mixing with the flavour?
@michaelboschcooking2 ай бұрын
I have never burped mine. The alcohol is helping with the release of the flavor from the fruit.

This looks amazing, when freezing pie how long before serving should I take out and do I heat in oven
@michaelboschcooking2 ай бұрын
If you bake the pie first before you freeze it I would thaw it out at least 3 hours before I put it in the oven to heat it up. If you freeze the pie before baking. I would just put foil over the top of the frozen pie and put it in the oven frozen to bake the pie. It will take a little longer to bake from being frozen.

Can you use a soil ph tester to check ph fermentation levels?
@michaelboschcooking2 ай бұрын
That is a good question. I have never tried that before. I have one that is designed for soil as well but only use that one for testing soil. I went back and read about the one that I have for food. The one that I have for food is so sensitive and only talks about food. I couldn’t find anything that mentioned using a soil meter to test food. I am sorry that I couldn’t answer that one.

This looks delicious. Can white onion slices be added without any problem?
@michaelboschcooking2 ай бұрын
Onions are great to ferment. I would not put a lot of them in the mixture as I would think they might overpower the beans and corn. A few would add a nice flavor to the ferment. What you could try is fermenting them on their own and adding them to the dish when you serve them. I love fermented onions in salads and pinto beans. So good as a side dish.

I am so glad that you found the recipe. I love all of my ferments at that level of 5 weeks or so. A lot of families ferment for 10 days. I have tried ferments at 10 days and it is just not as good as they are at 4-6 weeks. The time will be well spent on waiting. I can’t wait to hear how your pickled beans and corn turned out. My second attempt at making this was a success. I did not have any black mold this time. My only question is using only a sealed container in the fridge. How long will it last before it spoils?
@michaelboschcooking3 ай бұрын
I am pleased to hear your Sauerkraut turned out on this run. As long as the kraut is kept below the brine that you have in the jar in the refrigerator. It can be kept for several months. I have had some in the fridge as long as 4 months before it was eaten up. It will continue to ferment in the fridge over time as long as you leave the brine in the container that you are storing the Sauerkraut. You will be able to smell it if it goes bad in the fridge.

So I went to Trader Joe’s because they had this box with the black plums and right on the box it said “extra sweet plums” . It was 7.00 dollars for about 6 plums . I returned them . They were hard as a rock and sour . Such a misleading product to add extra sweet on the box . I was not happy !
@michaelboschcooking4 ай бұрын
That is a lot of money for something that is not any good. I have gotten them that way before picked too soon and they are hard as a rock. Not any good when they are like that.

Will have to leave out the strawberries due to allergy, but could i use kiwi instead? Very similar in flavor, i think..Thanks again for another great recipe! Hey from sw florida!
@michaelboschcooking4 ай бұрын
I have fond memories of my uncle and mother making these pies. I really like the combination of strawberries and rhubarb. You will have to tell me how the Kiwi turns out. I know blueberries are good in lieu of the strawberries as well. With the blueberries I would add another 1/4 cup of sugar as they are more sour than the strawberries to me. Thank you so much for watching.

I bought mine off Amazon. They currently do not have this model in stock. I also checked Walmart and they were out of this particular model as well. It is a Nuvantee Professional Whipped Cream Dispenser. Amazon link for this sold out model: a.co/d/3gxoKD5. I did fine one comparable and I will post the link below. When you purchase the dispenser you will have to order the cartridges as well as a separate item as they do not come together in the box. They are sold separately. Here in the UK the plums in supermarkets are all very similar but if you’re lucky enough to have a small amount of growing space you can have a fantastic range of plums that taste so much better than store bought fruit. In my very small garden I have Victoria plums, greengage, damsons and I’m growing some more young plants which are yet to fruit. I canned some Victoria plums and damsons last year we will be adding Victoria plums to our porridge today.
@michaelboschcooking4 ай бұрын
Thank you so much for sharing. I have never heard or seen any of those types of plums here in the US. I bet that would be good in porridge. Are the plum trees small or do they get really large? It would be nice to have a plum tree in the garden. When you can your plums do you water bath can them?
@plot18954 ай бұрын
I have some plum trees in big bins and others in the ground. They are columnar trees, so the idea is they don’t ever grow too big and you prune them to keep them compact. They’re on a rootstock that keeps them smaller too. I’m really new to canning and a bit frightened of poisoning everyone so I pressure canned following USDA guidance.
@michaelboschcooking4 ай бұрын
It is nice to have them compact that way you can reach them to pick when they are ripe as well. Yes, canning is a very good thing to learn and if not done correctly can spoil the food. I always check with the USDA site to make sure nothing has changed as things do change as events occur.

I put a pizza pan on rack under my Dutch oven because if not my bread gets too dark at the bottom. 😊❤👍🏼
@michaelboschcooking4 ай бұрын
I that that would be a great idea. I usually put a pan under certain baked goods it does seem like it helps them cook more evenly. I have a baking sheet that has an air pocket in between the layers of metal and it really helps with cookies. I am going to try this technique in my next baking. Thank you for sharing.
@silvermoon34864 ай бұрын
I put mine in 425 degrees Fahrenheit for 45 minutes, cold oven with lid , 9 “ Dutch oven & then remove the lid & cook for 15 minutes. That’s what Ben Starr on KZbin does & it cooks perfectly. Just says, my oven doesn’t go up to like 500 degrees Fahrenheit like some people’ does , so this cold oven way seems to work for me. I don’t know 🤷♀️ if the higher rise is better because I haven’t used the other method. 😊❤❤❤👍🏼. It bread looks really great 😊👍🏼

Hi Michael, thank you for the instruction! I've been making healthier food choices, so what ingredients could I add to this container to make whipped cream that tastes like RediWhip?
@michaelboschcooking4 ай бұрын
ReddiWhip on the label has tapioca in it you might try adding a little into the milk and mix that through before adding it to the container. Tapioca is used as a thickener in some foods so it might give it a thicker consistency. With the sweetener you could use a simple syrup made with a turbinado sugar. Thank you so much for watching my video. I really appreciate it so much.
