i tried this recipe 2 times. They all came out hard as rock after 1 day and small, not fuffy at all. dont know what i did wrong

Recipe: 240g bread flour 20g sugar 4g salt 2g dry yeast (Mix it using kneader) Add 140g lukewarm water (Start kneading:low speed 3 mins, medium speed 15 mins) First Rest 30 mins Divide to 6 pcs (65g) Rounding Rest Again 20 mins Flatten, roll and shape it into donut Rest again 30 mins Boiling water and add 1 tbs sugar Put the bagel in (10 sec each side) Bake 200•c 15 mins Final step: just buy readymade bagel at regular store😊

It works great but please remember to greasy your tin. I forgot and it was a nightmare to get it out in one piece. Also I had to bake it for longer, remember that it should reach a min temperature of 92°C inside and with 25 min of baking time it will not be there in all the loaf. Finally if you, like me, don't want to use dry milk just use 70g of milk together with the water for the yudane in the beginning (subtract from the 200g of water and use 130g of water). The hydration level should stay the same and you will have more milk in the recipe in the yudane instead of using dry milk in the first step. Finally cover it with aluminum foil, at one point if you bake it with the internal temperature I said you will need it.
