I noticed you said fat cap up when you placed it in the kettle and also when you wrapped it. If I'm not mistaken, I think I saw another video that said to place the fat cap down since it can handle more heat but it was in the Smokey Mountain Joe. Is fat cap up better overall or just for the SNS kettle? Also, did you use B&B Charcoal All Natural Oak Charcoal Briquettes 17.6 lb?

Rule of thumb is to face the fat cap towards the heat. On the wsm the heat is coming from the bottom. The kettles heat goes over the top. But yes I am using b&b, Walmart has it on sale for $10 a bag sometimes so I stock up.

@ Thank you for clarifying! I literally just got back from ACE Hardware where they have the B&B competition charcoal with wood. I saw another video that mentioned it burns longer than Kingsford. I'll make sure to look for it at Walmart next time I go. I'm going to smoke my first brisket Christmas day so I'm not rushing because I'm worried about company coming over since we get together Christmas Eve anyway. If it comes out good, I'll make it for New Year's Eve and I'll have some experience under my belt. Great video and explanation. This video is now saved in my grilling and smoking playlist.

I stopped using the vortex on my 22 & 26. I find the wings come out the same or better just cooking them offset using the SNS.

I agree! You can get some awesome wings using the SNS insert. (Made a few videos already) I had a thought to make wings without any extra accessories, go alittle old school? going to try this next, I have some wings defrosting

@@SJCOOKS Before I got my SnS I always did them old school style with banked coals. Nothing against the Vortex either, it definitely works as advertised. Although, it has sometimes burned the wingtips if I don’t cut them off (which I normally don’t). If I had any criticism, it’s that it actually works better than advertised.

mustard is an option because it helps the seasoning stick. that's it. It's a common ingredient to the average american that's used in bbq. Use anything you want that will help your rub stick to your meat. there are no better or worse, it's all preference.

I seen a ton of KZbinrs use it and they all say it's for rub to stick. But I've never had any issues with rub not sticking since the meat is moist enough for it to stick by itself 🤷♂️

i thought the music was pretty chill on this video? it did kinda give it a chill, simple cook kinda vibe. i was going without music, but felt off. The dent on the lid is a mystery, i think one of the neighbors kids were flinging huge rocks up in there a few years ago. no way for me to prove it but did find a few bigger rocks in the yard, that's the only thing I can think of.

Ironically I just made wings just last night. And guess what, I didn't use my Vortex! In fact I find that I'm using my Slo-n-Sear for almost everything nowadays except low and slow cooks. I reach for my Vortex when I'm cooking higher volume, like Super Bowl Sunday or something. If it's just me and wifey I just toss 'em on with the Slo-n-sear. I don't know, there's just something "different" about the texture you get from one vs the other. Both good, just "different". Good stuff as always brother!

thanks brother, I wasn't even going to film this one but the moment I reached for the vortex, I had to do it since it's been a while since I filmed any cooks with it. I kept this as simple as I could because that's what dinner usually looks like. but now, i am really wishing people want to see more cooks on it because i'd like to try new things on it next year. I really want to see what the medium vortex looks like on my 26 weber, that's probably enough wings to feed all the superbowls in this entire neighborhood, lol!

My man Sal! Those thighs look great, man. I did a whole series on direct grilling but I stayed away from the thighs, thinking they'd have too much grease. But then I did burgers, so go figure, lol! I had some hick-ups on a couple of the cooks but I left them right in the video and talked about it. Overall though it was the most fun I've had just cooking on the grill in a while, and some of the best-tasting food. Quality content as usual man.

Awesome video! Thanks for explaining so well and the quality content! I am getting into grilling myself and have noticed there are tons of accessories. I want a Weber Kettle, just not sure of size (22” vs 26”). If you’re taking requests…Perhaps you could make a video showcasing your favorite (or most used) grill accessories (including brands) and why you like them? So grates, thermometers, etc. Could be gas or charcoal, but specify if and why one is better with a certain accessory. This would help me and hopefully others to learn what is out there and, more importantly, how it can be used in different cooking situations and the benefits of cooking with it. Just a thought!

great thoughts! lots of awesome ideas here. I've been wanting to this video of recommended accesories and you are really inspiring to make it soon. I appreciate the feedback and I'll see what I can do...in the meantime I got a similar question about 22" vs 26" and I'd recommend you get the 26" and get a small portable/travel grill for smaller, weekday cooks. If you have no intention on getting a 2nd grill...go with the 22" because you'll fire it up more (this is a great 2nd video idea that I'll try to make)

Thanks for the great video, SJ! Now, please upgrade your BBQ sauce game. 🙏 Here’s a suggested “recipe”, if you haven’t already tried it. Mix the following in equal parts: Your favorite barbecue sauce, Sriracha sauce, and honey. You can adjust the portions, depending on how sweet or spicy you prefer. And before you put any on the chicken, please warm it on the stove first. You’ll notice the difference than straight of the bottle. 😎

Easy - 26" weber, especially if you buy a small travel grill for smaller weekday cooks. It becomes a harder question if this will be your only grill because the 26" does eat up a lot of charcoal and would then lean more towards recommending the 22" SNS grill because you'd fire it up more, even for smaller cooks. Do you have other grills? if you had something like the wsm, where you can cook brisket/turkey comfortably on there, I'd lean over the 22" sns Kettle.
