Congrats on your progress. I didn't see everything you have done with your place; however, it occurs to me that you might gain much from using a biodigester at your place. Scraps + poop + some water (can be grey; but no bleach) in and get Methane (compressible gas, usable for many things) and liquid fertilizer out. I have not tried it myself; so I cannot offer any first hand advice; but it might be a good fit for you. Just a thought.

What you've accomplished is incredible. Northern AZ., can be harsh weather, high winds, cold, and hot extremes. Your one amazing man to have created your off grid homestead.
