Yes, this is true. Bonsai is a series of horticultural techniques, not a species of dwarf tree.

haveing grown and improved bonsai for nearly 50 years two mistakes people make are ..letting the roots grow too long as like sucking through a straw if the roots are too long the leaves cannot suck up water ( try sucking through 2 or 3 straws attached to each other ) the other killer is too much fertilizer A THICKER LIQUID will suck up a thinner liquid hence the roots work in reverse.try boiling tea leaves let the tea cool and use ( no milk or sugar ) in real life a tree life is governed by how fast the roots grow. a silver births roots grow fast hence a life span of 120 approx..A oak tree very slow growing roots about 600 years approx ..pine tree hardly any growth per year 1000 + SO to sum up prune the roots and not too strong feed. nettles are a good source boil them cool.and use the liquid.... another fact trees release chemicals to kill off other types of trees or repress there growth the most deadly of them are Rhododendrons if you have bee hives next to them throw the honey away as it is poiseness.thats if the bee collect nector from them.( dont let your kids near them at garden centres along with yew trees.)

The mulberry we plant with just sticks r now big right now in our backyard, and it's been a year only. They're so fast to grow and I'm planning to bonsai it. Should I leave it in the ground for a couple of months before bonsai'n it?

Depends how thick a trunk you want in your tree. Pretty much leave it to thicken to your desired width. Once it’s in a pot it won’t significantly increase.

For the soil, I've bought a chinese elm ( sold as an indoor zelkova) with pretty organic soil, this spring, should I change the soil? And is it okay if till spring I keep it indoors and then keep it outside forever? Because I dont think putting the tree with many leaves outside is a good idea now in winter. Any tipps?

The tree will benefit from a more free draining soil. And the tree should be ok until spring.

Wouldn’t lack of sunlight be a problem when placing them in shelters in colder months ?

Although pines continue to photosynthesise in winter, they do slow down. They will get reduced sunlight in the shaded area, but they are not in complete darkness.
