So the written recipe calls for 1 stick of butter but it looks like you used 2 sticks of butter in the video. Slightly confused.

In the video did you pour the browned butter ? So, do you use 1 stick or 2 sticks of butter in total ?

Wow! As a suggestion (of course, take or leave)-I think you could start every video with that! A lot of people can relate to not feeling unique and then join you on your motivation each video…potentially recognizing just how unique you (and they) are!

Using tins either double wrapped in aluminum foil or that are completely solid (with no false bottom) should help!

The cookies look fab, and the combo of dark chocolate, pistachios and brown butter is right up my street. The emphasis on brown butter should have been more visual, as I dont know when you added it to the mixture?

Thank you for this demo. I made this today, it tastes absolutely terrific, the filling is silky and just sweet enough, and the base has that subtle hint of orange. Delicious! I had to use a stand mixer for both the pastry and filling and it worked fine, though bringing the pastry together was a challenge because of how crumbly it was. On the second attempt I rolled it out on the parchment which helped in lifting and plopping it into the tin.
