I just found this video and realize that it is 3 years old, but AeroPress now makes a flow control filter cap that makes this so much easier! You don't have to invert it to stop the flow. There is a pressure sensitive valve that doesn't let the water through until you start plunging. It does make an awkward air release noise (fart) at the end which always elicits a remark from those around me, but that's a small price to pay for the convenience.

I believe he has the same machine I have at work mine is a double group head la marzocco machine. I don’t know which style off the top of my head but it’s a refurbished custom pained machine and I know it was 28 grand

Technically they do need to change grind for the best coffee. That said, if a person says their coffee always tastes great, they may be happy with it the way it is without messing with grind settings every time. I like the best espresso possible, some are okay with just a good espresso. A bit like your average cafe that aims for good espresso, but done quickly enough to be viable from a business perspective. Thanks for a great basics video. I've flagged this one for me to go back to when needed as I think having the basics is always a good idea for anyone wanting the best coffee.

Here in Spain, a cortado usually has much less milk. One part milk to four parts water, or less. That mixture at 50% here would be a “café con leche”.

The recipe for a single portafilter you didn't mention ! A ratio of 1to 2 means 15 gr if coffee for having 30 g of coffe! I don't think it would have a good test !!!😮 with 9 gr and a low grinding we have a horrible bitterness !🤮 You should show your theories because my experience says is not possible. The flow is controlled principally by grinding not by quantity !!😅😂!😅😅 But if you can do it you are a genius😅

Few words! You used one of the worst modern method! The best modern method is to use also needless.and avoid automatic tamper!😮 why? Needless go deeper and complete the distribution. Automatic tamper can't feel the consistency of a coffe and decide for you the pressure! The same coffe changes due factors like time and temperature ! That is the problem ! People think modern means eliminating the variables 😢!😢 But it's control these ! And certain variables must be controlled manually ! No machine can tamper like,a human!😮 A good professional doesn't need of nothing except a tamper! And a balance! I will never use an automatic tamper!🤮 If you use,à double filter you don’t need the distributor ! The different time extration is because you press it bad😮 You tube is full of teachers 😅 but first they should study the basics 😂

I know this is an old post, but I'm just finding it. Thank you so much for helping the average joe learn how to make a great home brew. Really appreciate the tutorial. I don't know anything about what it takes to produce videos like this, but if I had one critique it would be sound quality. It sounds like you're talking in a gymnasium. Very echo-y. Even with that issue, this is still the best instruction I've seen by far. Good job. Please keep up the good work.

A very useful video - thanks. I have an old La Spaziale Mini Vivaldi with a vibe pump so I tend to use the 'appearance of espresso' as the start of my shot. Seems to work OK. That's an amazing machine that you're using - what Marzocco model is it?

I have the DF54. Great little grinder. I grind straight into the portafiller. I put a funnel onto the portafiller and hold in under the grinder spout.

I ask you if you think a ring distributor for levelling all? In my experience this tool is completely useless if you use a disc distributor and a professional grinder. No need to dissolve big chunks of coffee! On the contrary a disc distributor can't dissolve big chunks of coffe. I think this tool is fundamental if we want to change the uniformity of the grinding! But will not resolve quality shape of our grains of coffe. So with professional grinders it seems a loss of money and time😢 Do you agree?

i'm not sure what you refer to as a ring distributor? WDT is the best way to remove clumps in a grind. commercial machines d ahve issues, but not as bad as domestic as they have clump crushers and bigger burrs

Here in South Africa the market business and coffee trailers are so over traded. Seems markets are everywhere but that is because of the very high unemployment rate

Classic example of any job, you can't expect quality and quantity. I can take my time and do something well, or I can just quickly put stuff together. Ain't no 1 michelin chef can deliver same quality in buffet of 500 seats vs a specialty restaurant with 40 seats max. lol.
