🎉 Yay! Super proud of you for learning canning on your own!! 👏🏼 I can say that it gets easier as you can more and know what to expect. For making sauce, I bought an electric roaster at a thrift store that I can plug in outside to let the sauce simmer so it doesn’t make the kitchen so hot. (Also, it holds a lot - so less pans! And you can put water in the bottom so it doesn’t scorch!) As for the pickles, just use the jars that have lower headspace first (or go ahead and store them in the fridge, if that makes you feel better.) But they’ll most likely be just fine!

I learned to can 7 years ago after i got married. I do peaches and pickles every year, and sometimes pasta sauce. Its a learning curve but so worth it! When I boil my peaches to get the skins off they usually only boil for 30 or 40 seconds, which doesnt get them to squishy!

I wanted to add another comment to give you a second product with the same ingredients - so if you peel your peaches there is still peach flesh left on there and really great flavor! So I boil the skins and pits in water to make a peach juice, and then make peach jelly out of the juice! Turns a waste product into more usable food for the family and brings down the cost of the peaches. Peach jelly is one of my favorites now! Just don’t add too much water or it will be too watered down - just cover the scraps with water. Pomona’s Pectin is a great low sugar pectin for making jams and jellies 😊

Wow! So proud of you to take up such a huge thing like canning! It does look like a lot of work but at the end you are just so proud at the result and i do think it's worth it. My dad started to make his own pickles but it seems like him and I are the only ones who like it (he makes it extremely vinegary lol 😂). 🎉

One tip that I didnt know the first time I canned - add a splash of white vinegar to your water bath, it keeps the jars nice and clean. If you have hard water at all the mineral deposits will make your jar look cloudy. Not harmful, just less esthetically pleasing and harder to wash the jars 😊

That processor brought back memories! Growing up my mom canned a good bit and she made applesauce and I loved turning the apples through that thing haha. Canning is so intimidating but definitely something I'd like to try sometime, I'd need the help of my mom though lol. I'm impressed that you undertook this by yourself with 4 kids at home! I HATE canning by myself 😂 the only way its enjoyable is to do it with a partner! I get together with my mom and sisters every year to do peaches/pears, and have done salsa/spaghetti sauce/pickles with friends 😊

I don't know if you have farmers markets around, but that's where I sourced my tomato's from and a lot of the farmers would do special deals for the bulk buying of produce
