You def need to level your rig so the smoke and heat flows into the cooking chamber and out the stack

Awesome job on the smoker. Don’t spritz the brisket, it hinders the bark from forming.

Weld plate in the bottom of the cooking chamber to decrease the area of the chamber starting at the firebox making the cooking chamber smaller at the stack end. This will help level out your temperature and decrease your use of wood.

Not sure if anyones said it but y’all should look into a twist damper like what’s in an old school fire place. They mount inside the stack that way you don’t have to put it all the way at the top

Great work. But that stack seems pretty high. i know that when it is too high, the smoke cools too much before exiting, causing it to lose 'lift', and creating backpressure on good flow. Would be interesting to know if there are any issues from it. It could be fine, i'm no expert.

Add a valve for the drip. Weld in a coupler, 6” nipple and a brass valve.

How much money did you spend from start up tool Materials every thing?.... trying to build my own from a 250 gallon so looking a figure of what it should cost. Grate job on the cooker man as well she is a beauty.

I just found this channel and I’m glad I did. My brother and I are about to start a bbq business in the Milwaukee area. He wants to buy a built smoker and I’m not going for it. I convinced him and I’m looking for tanks and trailers. This is exactly what I envisioned. Watching your videos I have no pre build anxiety! Thanks for the knowledge and keep it up!
