Can I ask why you used a bread machine for the mixing of the dough instead of your stand mixer? I just bought an ankarsrum but Im thinking for 3-4 cups of flour, they're might be something easier to use.

I use my bread machine for not only making bread from start to finish but also for mixing, rising, and then kneading again. Then, I pull it out and shape it into baguettes, rolls, hamburger buns, cinnamon rolls, etc. The homemade settings allow you to program it to do what you need. It does all the work for us, then we finish it in the form that we want. Hope this helps.

I just got my mixer 3 days ago. I've made 2 batches of dough and I'm pretty sure I've made all mistakes. Watching this video I can see my dough did exactly what you said would happen, it became a big ball right away. I was just using 3 cups of flour so I can see there is a big learning curve using the mixer. I'll re watch this video a few times and hope I can work it out. ❤

Possibly try cutting down your Kamut to only 1/3 of the recipe. I have used 1 part hard white, 1 part hard red, and 1 part Kamut, and that seems to work well. Even though Kamut is considered a hard wheat, it doesn't tend to rise well on its own.

This makes too much sense. Im curious about the people who are still sensitive to the home milled wheat. I wonder if they are blood type O. Dr. DeAdamo tested most foods against the different blood types and found type O's should avoid wheat bcuz it agglutinates (clumps) their blood cells causing illnesses over time. However the good news is that spelt, rye, buckwheat, amaranth, millet, oats, rice, teff, and soybeans are on our approved list. Im curious on your stance of animal fats now that the industry came out and admitted their lies about them. There are many vitamins in their fats such as vita D that are beneficial that also dont cause widespread inflammation in the body. Unfortunately Dr D found that no one should consume any kind of pork products, but many pastry chefs love the effects of pork leaf lard in their baked goods. Not to mention theyve destroyed the lards available in the stores by hydrogenating and adding dangerous substances to them. That leaves only the fats you process yourself or those available at a butcher shop. Thank you for sharing your knowledge about the grains on our health. I cant wait to be able to get a mill and some grains to be able to improve my own health. I know personally as a type O that i do nothing but gain weight if i consume any flour products commercially produced and feel much better avoiding them. I had bought some organic whole spelt flour to try my hand at making sourdough but bummed to know its not quite the same.

The only thing is the bread is very crumbly. I used the egg and powder lecithin. Anything you recommend I do to prevent the crumbling of this awesome bread?

It is healthy if you make it yourself from freshly cracked grain. If you don't have a grain mill that will grind it course enough, you can crack the grain in a blender; then boil it and add the ingredients that you like.

This was amazing. Thank you! The only think I disagree with is that cholesterol has not been proven to cause heart disease. Our bodies need it, especially the brain. We should not be concerned about high cholesterol.
