I own 3 restaurants and I give you mad props on entering the food business. Food industry is rough and slim margins. When the world closed down in 2020 I thought I would go bankrupt. Keep the options low. Key to quick service is to minimize variety and complexity. Repetition needs to be second nature to pump orders out. Especially since it’s critical to sell in volume to earn a profit. Hawker probably lower barrier of entry but choosing the right location to attract the demographics that will enjoy udon needs to be researched. Don’t do mall locations unless the rent agreement is good because malls can have strict adherence to their operating hours and other demands. Stand alone restaurant is nice to have but very pricey and location needs to be accessible. Maybe if you outgrow the hawker scene to expand to a stand alone restaurant perhaps?
