Thanks! To make this even better, I would recommend cooking them in a tray with the sweet potatoes and searing the skin at the end. Give it at least 2-3 hours for very tender duck! Enjoy 😊

Absolutely loved that episode Michael, the videos and pics were awesome. Love the idea of an upside down fire too…will deffo be playing with that. Sorry we are late to the party! Been out on our boat attempting to catch sea bass 😎…no joy, but when we do we will be smoking it as recommended 😉

mmm bone marrow...delicious when used to make a gravy as well! Another great and ancient technique with fire is to heat some large stones in the fire for a while then and place them in a pit with the food on top (separated by leaves) then seal it to make a slow cook oven. Big joints of meat can be beautifully cooked this way plus lots of roasted veg!

@@pajefferies it was very indulgent! I haven’t done some hurried cooking for ages, we used charcoal and embers for our last one, so will give the stones a go! The last time I warmed up a rock, it exploded, so I will try and find a dry one haha!

Thanks so much! I'm glad you liked it and now hopefully you can look at a fire in a different way. If you are after a portable camping fire pit, then I do stock madkon. There are plenty of others though and it all depends on how much use and portable you need them to be!

In this video I’m using a MadKon bbq / fire pit. I usually carry this and a Cobb bbq. I then have the perfect field oven (Cobb) and then a very compact fire pit which can be used for direct grilling and campfires. 😊👍🔥

Thanks guys. If you have a Cobb, I would cook this for 2-3 hours on low and slow. On the Weber, it’s ready in 1.5 hours, but is better with a longer slower cook. 😊

Another very informative vid. Good pointers on the fuel. Have you tried Australian heat beads? Work great for roasting joints of meat (longer burn time). I like the innovative capture of duck fat to roast potatoes at the same time. Looking forward to the next vid on fire cooking. How about a spin off series for the Cobb and MadKon Braai !? Thanks Phil! The Australian heat beads are my “go to” for the long cooks on Cobb, they are awesome! This dish is actually better on the Cobb, place the duck legs and potatoes in the same dish and run the Cobb low for 2-3 hours. Once this series is complete, I’m thinking about cobb recipes, I just don’t want people without a Cobb to miss out at the moment. But now we have reached “off set” they can simply set up the bbq for offset to match the Cobb style 😊. Thanks for the support, I really appreciate it. 👍🧑‍🍳

great vid. Honestly, I was disappointed to see the cobb disappear - it's my go to for outdoor travel cooking because of all the pans, gridles, pizza stones and it can slow smoke properly. Even with the weber, put the wood chips in a tin foil bag, punch holes though the bag and then soak. You'll get a slower smoke release and and easier clean up.

@@simonwood1260 thanks! I think this dish is actually better on the Cobb too. I like to combine the duck and potatoes into one dish and then slow smoke for 3-4hours. I do think the Weber is a better smoker out of the two, but it has less cooking space. Instead of tin foil, take a look at the little smoke tins. You can even make them from left over tins, just be careful of any paints that are toxic. Thanks for the support Simon, I sense a Cobb series at some point, so get out your recipe book! 😁👨‍🍳

Hi Chef, I used to have a Weber like yours but did not really get on with it. Probably because I did not properly understand the airflow. Did you have all the bottom vents fully open? I now use a Cobb mostly. Thanks again really enjoyable.

Hi there! Thanks for the comment, I’m glad you enjoyed it. I was worried I waffled on a bit, so will try and improve next week. For the Weber.. the vents on the bottom were open. However, the wind pick up so I put one of them half way down as the temperature was climbing too much. If I can’t achieve target temp with the top vents, I adjust the bottom too 👍. On a side note, this dish is better on a Cobb, put the duck and potatoes in the tray together, 3-4 hours, low temp. 👨‍🍳

Thanks for the feedback. I felt it could have been condensed when it came to editing, ll go a bit shorter on the next one. For the sauce and staple.. I think the orange and the salad dressing is just perfect to compliment the salad. The duck is moist and rich. The sweet potatoes cary it all well. I won’t judge you if you add bread though! 😁

I’ve been using hexlcad for a while, they are a hybrid pan. I really like them, but they take some time to get used to and aren’t as “non stick” as traditional non stick pans. Stellar pans are a great shout and Samual groves 🧑‍🍳

Ya had me at Tabasco sauce. I agree with you regarding the difference between great food vs. a great meal. The best meals I remember are not of me sitting alone in a restaurant eating ridiculously amazing steak tips from Floramo's just outside of Boston. It was in that same restaurant, eating those same steak tips and seeing the expression on my son's face as he realized that someone outside of our great state of Texas can cook some amazing fall-off-the-bones ribs! (He was about 8). Beautiful memories can be made even when the food falls a tad short, but there is also the joy you feel, seeing people you care for thoroughly enjoying the food you put on the table FOR THEM. Be it my hamburgers or a bowl of my Texas Red. Good food can cheer up a downcast soul. It just does my old mean heart good. :) Looking forward to the coming episodes!

good guide for people starting out in cooking. I would replace salt with MSG (which is exactly what Maggi is and the umami in tomatoes and potatoes), but I know MSG was demonized by an idiot journalist in the US who could not read that the report said you had to consume kilos of the stuff to experience any problem. Regarding salt, salt is salt BUT table salt contains anti caking ingredients and that is why we should not use it for cooking.

MSG is why Chinese food is so good too 😆. Personally, I prefer Maldon as it isn’t as strong so allows for a more even spread of foods such as meat and vegetables. Nuance seasoning I guess. Thanks for tuning in.

You are quite right about location. I was BBQing some pork steaks in my Dad's garden a few weeks ago as we camped on his driveway. They were looking quite good, I'd just flipped them when I was hit on the shoulder by a flurry of high speed feathers. Slightly shocked I watched the magnificent Red Kite rapidly ascend as it travelled the length of the garden. It was only then that I noticed the missing steak. Won't be forgetting that meal in a hurry!

I ususlly cook outdoors on either the Cobb or a Weber Q220. For the Cobb I use the Australian Briquetts or the Weber ones which I think are more consistent for heat output.Today I failed with a Pork Loin on the Cobb as I covered it in foil to keep moist but the 8 briquetts were not enough. The roast potatoes and carrotts plus the meat had to be finished in the indoor oven. Never mind it is all a process of learning.

​@@davidslocombe2634 I love the Australian heat beads, a great consistent fuel. A shame on the pork loin. I like to sear mine and then place it in the cobb with the dome on, i think it helps develop a flavour crust and gets some initial heat into it too. As long as you enjoyed your meal, that's all that matters. Maybe some extra heat beads, or if you want higher heat, I sometimes run charcoal, especially for roast potatoes.

Yes! maggi liquid seasoning - love it. You've just described/listed the bottom drawer in my camper van!! Polpa is the best. Im grateful for the clarity on capers though - have used them a lot but never really understood why/how they work best. I love my van meals, especially since i got a van with an oven - more time to relax and do other fun stuff with less steam from the hob stinking up the van. We have a cobb as well, but i don't think the cobb charcoal complements certain foods such as chicken nearly as well as red meat. Would value your thoughts. Looking forward to this series to up my game.

Bavette was one of my favourite cuts before Waitrose "discovered" it and the price went up. Regarding herbs, if you are trying to prolong the life of a shop bought "living" herb, then don't. They are designed to die so you buy another one after blaming yourself. Even garden centre herb plants are not hardened off and will fail on the first cold night. So, grow from seed.. Some herbs need a lot of light (oregano and rosemary). Some need less light (coriander, mint tarragon (my favourite) and, surprisingly, thyme. Some herbs need a lot of water (parsley, basil (including holy basil) and mint). Some need little water (rosemary, sage and thyme).Finally, you need the right size container if you want to keep the plants (like mint and thyme) forever and for the ones in containers, you need to get them out of the van when you arrive somewhere. So, one dashboard tray is not enough. You need 4: One for lots of light and water; one for Lots of light, less water; one for less light, lots of water and; finally one for less light and less water. And plant your seeds according to their needs. 5 minutes of google is your friend if you want to keep the herbs lasting throughout the year. After you have mastered herbs, you can look at cut and come again lettuce varieties. But it is all dependent on the space you have

@@michaupaszko2482 I would recommend checking your operators guidelines as each port can vary. In Dover, we would sometimes arrive 2hours early and the dog doesn’t add any additional time. We would then usually get offered an earlier ferry, free of charge, so we wasted no time and crossed early. Worst case scenario is that it is full and then we are early for our crossing, we put the kettle on!

I was skeptical when Buncey told me about this, but I am now a complete convert. Such a nice and easy way to cook and deliver to the table. Use heavily salted water for the part boil, it helps evenly season the potatoes and creates a crispier texture when placed on the BBQ. For the restaurant, we would probably vac pack the potatoes with garlic and herbs and then sous vid, before grilling, but I think a nice dressing is a better return on investment!
