I take a thin measuring cup and pour water in it to begin the cooling process. I then pour from it for the second half, as the gooseneck kettle is less important for the immersion. Works well to reduce temperature. If you pour from height, the air cools the water faster.
Between each pour, are you always keeping the water at the desired temperature. For example, if it is a medium roast, is each pour at 87 degrees celsius ?

Dear sensei Kasuya! Is there difference for 28g of coffee - volume of water and time? Or It's just the same formula - 28*14=392/ Domo arigato!
