If i don’t like baking soda, will a vinegar “brine” work? And what about a salt brine? Since it worked for tender chicken, would it also work for tender beef?

Hey there, ive worked at Popeyes for about 3 years now, i can confirm this video is about 95% correct into how we make the chicken filets. I cant confirm if the spice mixture is entirely correct, since it doesnt list all ingredients explicitly, ie it says seasoning, or spices for some ingredients’ along side normal things like garlic and salt. Great job

That damn seasoning is why it took me a couple of months to reverse engineer this recipe. I still don’t think it’s 100%. But it’s like 95%. Also, the tallow flavor in the frying oil does add a little bit of flavor. So, I think that may have something to do with it. Thanks for commenting!

I never had popeyes chicken or chic fil a but i made a mix of both techniques and popped them in the airfryer, and I am here to tell you I am so shocked, best chicken I have ever made. Thank you so much ! I finally nailed it! Tender, juicy, flavorful chicken breast. Just wow pinch me I am dreaming🥰 (i’ve struggled for years).

I didn't know this until recently, but apparently one of the industry secrets of fish and chips in the UK is that they use custard powder to make their batter. Maybe that could work with this recipe?

Strangely, i use kikkoman. Less salt on one hand, allows you to add salted fish or cured sausage for taste and saltiness.

Heat Control. He talks about turning down the heat.. Its far better to leave the gas at high heat, BUT LIFT THE WOK, or a pan, frypan, whatever you are using.. Thats heat Control at your finger tips.. Cheers from NEW ZEALAND..

Just buy the "red bag chicken" at Aldi. Toast your buns...add mayo, lettuce, and pickles. YOu have an amazing chicken sandwich. No need for the deep fryer..which will make a mess on your stove. It's delish.

Great video thank you for the explanation and giving the basics. I love soup but my issue is always the broth.. i don't always have broth on hand and it's also very high in salt unless i make it but then it's more work.. can i successfully use water for any of these recipes or soups instead of the broth!? Any tips on how to do it successfully?

Restaurants do not use the same off-the-shelf mayonnaise available to consumers. They typically use a "heavy duty" mayonnaise that lacks all of the preservatives and crap they put in the stuff we get at the stores. It tastes better, and the restaurants don't need that garbage since they go through mayonnaise so quickly. That's another reason restaurant Ranch always tastes better than it does when you make it at home.
