Mexican here, in Mexico were dont use trajín for elotes, we use chile piquin, being the one that pica or the one that no pica, altough I dont know were piquin comes from

My boss said he doesn't want me using my air fryer and fry pans as much in the office because it's a fire hazard. I need to figure something else out soon. Keep up the great work.

I'd probably make a miso butter. I bet that would be good. Just take some miso paste and whip it into butter. That stuff is legit! It basically tastes like a very savory, salty butter!

They're about as big as a mackerel. Maybe up to about 10 lbs.

I'm very sorry Cotija isn't available for you! At the Izakaya I worked at - we used a blend of three cheeses. I can't remember which ones. But you should be able to use any easily grate-able cheese! Thanks for watching and hello from Texas! :)

It's really funny you should mention uploading on a schedule as I'm really trying to figure out how to do that right now!
