Time consuming to wrap individually. Why not freeze in ice cube trays and cover with foil?

Looks yummy! My mom adds celery as well, when Sautéing the vegetables (potatoes, carrots onions garlic + celery) and sauteed sha3raya at the end. For texture! 😊

Why did you use an egg? i have made felafels for 30 years since visiting Cairo and never used eggs. I do not think that is authentic sorry. I also do not think you need baking powder. :)

There are many recipes for falafel 🥙. Eggs make it fluffy not compact in texture. Feel free to not add eggs or baking soda if you prefer the texture to be compact.

Ahln beeky 😊 I prefer to use green onions as it has more fibers and some people use regular onions too. So it’s not really a rule. You do what you like 😊

Some Egyptian restaurants add fried eggplant🍆 to the tammayya sandwich, along with sliced boiled eggs and French fries. Can you show recipe foe fried eggplant.

Alsalamu alakum Sister! Let me start off by saying that I cooked this dish for my family’s dinner tonight, and it turned out amazing! Growing up in the west, I didn’t know what kushari was until my oldest sister married an Egyptian man, and when she learnt how to make it, she would always cook it for us when she visited. The first time I ate it, my mind was blown away because it was so delicious. Now my own children love it too. We don’t have a dish like it in Lebanon.

To make it fluffy not compact/dense. Some people like it dense though, but mostly it’s better when it’s fluffy.
