Interesting recipe. Looks like you've used white kidney beans or haricot rather than fava? Here in the UK fava beans or light brown (also sometimes named borlotti beans). I used fava/borlotti beans for this receipt and they are fine (although they don't seem to break down as nicely as the white beans you used). Also, 1/2 can of tomato pulpa did turn my soup light red - perhaps i need more beans than I used (I cheated and used tinned beans). Like the addition of ginger and chilli - perhaps not so 'authentic' but a nice and welcome addition!

Eccola qui, una delle Paste della domenica qui in Calabria, ma qui come immagino ben saprai, in tutto quel patrimonio ci vanno sicuramente salamino dolce o schiacciata piccante, uovo sodo ed in alcuni casi anche le melanzane a tocchetti. 😮😮😮 Nulla togliere ovviamente alla tua deliziosa ricetta caro Marco. @@authenticitaliancooking I'm being careful (okay, not as careless, haha) with my eating. I feel better than I did a year ago, but I need to put in more effort to lose weight. I eat only a fraction of the meat that I used to. Being a heart patient sucks, man. I've decided for real now, that I want to be fully fluent in Italian, no matter how long it takes. I study a little every day, and honestly -- food and cultural issues aside, even -- Italian is my favourite language in the world (for its sound). The grammar? It's crazy though.... Hugs, MC =)

The twirling fork method was working just fine until you inexplicably stabbed the plate. That is done in midair so that excess pasta falls back into the plate.

this is all part of the twirling technique, you have to put the fork down and then up again, otherwise you will fork too many spaghetti

no need to steam the egg yolk, they need to be raw and fresh, just mix on low speed with sugar and with mascarpone as shwn in my video.. This mix should be smooth, perhaps the mascarpine you have used was not of proper quality, total mixing took about 30 seconds (in the video it was cut down to about 5 seconds). I hope this helps

thanks for asking, the tuna is optional, it is very common to eat this sala dalso without tuna, or by replacing tuna with green beans. You can boil green beans together with the potatoes, they have same cooking time (15-20 min)

I fried up french anchovies today for the first time. Loved it! See no reason to cut off the heads though. At it all. A lot simpler too. I also skipped the butter. Don't think it was needed.

thank you for the feedback, agree butter is not necessary, it only helps if you want the result a bit more crispy, you can also eat with heads, it is common in the very South of Italy (Calabria), my kids prefer without heads

In Italy there exist numerous regional pesto variations, in addition to pesto genovese - such as pesto all'amalfitana...please only try if you like lemon!! And which is yoour preferred pesto type?
