You can use whatever you preference. A little fat will give more taste, but I think when using chicken lean is more normal to use. If you use pork then probably more fat is common.

Sorry to hear. I guess you used the correct size tin and turned it over when finished to cool down. Some tips (you might know). No grease the tin, no paper lining, just at the bottom. And wip to stiff white peaks. Other than that I have no clue why it did not work for you

@@ellebelle8830 I boil in the curry, but the trick is not to boil too long so they dissolve. Boiling potatoes in the curry will make it a bit ticker consistency

This was so good!!! I accidentally had my pan on too hot with my 1st attempt and burned the paste, but 2nd time trying everything came out beautifully! You definitely have more time than you think and it's wonderful seeing the recipe come together. At every stage of this recipe you get a great product :)

Also, I used Maesri band curry paste. I think it's spice level is very forgiving. Might try a hotter variation next time to challenge myself, but you can easy serve this to a spice fearing family and get accolades. ;)

This looks really good! There was a restaurant near me that would cut the potatoes into small segments and deep fry them before putting them into the broth. I cannot even begin to describe how good the broth was. I'm trying to recreate that.

I made this recipe yesterday. Thank you vey much for sharing with us❤ The first one came out nice and fluffy. I follow the recipe and use 18 cm mold. But the second one not:( I doubled the recipe and use 22 cm mold. The cake didn't rise and it was uncooked. Can you tell me what mistake i did?)

I think doubling the recipe is too much for the change of size. The height of cake in try of your second try with 22cm is much higher then 18cm I suspect. Can you remember? If I remember my math from school it will not be twice the area when going from 18 to 22cm. I guess you either have to reduce recipe size or increase baking time.

Depends on where you are living and air temperature you have at home I would say. Hard to say in your case. We have about 20-22 degrees Celcius at home and rarely have a problem for quite some time.
