while making the onion tomato masala, can we use fresh tomatoes instead of the canned done? do you see a difference in taste and/or cooking method?
@lifeadmin365
@lifeadmin365 11 күн бұрын
Absolutely! You can use fresh tomatoes for sure. Flavor wise, I found a small difference.. canned one’s flavor feels more restaurant type while fresh ones taste more rustic, home style, both delicious in their own ways. If you want the restaurant feel from fresh tomatoes, then blanch them in salted boiling water for only 2 minutes, remove and place in ice water to stop cooking, peel skin and remove seeds and purée it until smooth.. for me it is time and money saving so I go for canned tomatoes (crushed). After watching this video would like to suggest you a tip. See if it works for you. I observed the cooking of prasads in temples very carefully. We always tend to waste time in the initial tadka. Wheras what they do is simply cook vegetables separately in each pot by simply adding water and spices. When semi cooked, make a huge tadka at once and add a laddle full of tadka to each pot, cover and let it cook till done. Saves a lot of time for me. Also ... Apan je mhanto na prasadachi chav veglich aste...ti kashi te hi tumhala samjel 😊 All now I'm looking for is correct method to cook and freeze chapati.
@lifeadmin365
@lifeadmin365 2 ай бұрын
I kind of like that idea because most of the time the tadka ingredients are the same. I will see if this tip works for me. Thanks for the idea. I have tried too many variations of fridge/freezer- friendly chapatis, but nothing beats freshly made. If you can get chapatis to roll out uniformly thick, then you can partially cook (30 sec each side), cool completely and then stack together and refrigerate them in groups of 10-12. These last for good 5-7 days in fridge. If you stack plastic sheet (avoid parchment) in between each such chapatis, stack 10-12, wrap in parchment paper and place this in airtight by freezer safe zippered bag, you can have decent frozen chapatis. When you take them out of freezer for fully cooking, don’t thaw them, cook in their frozen state (don’t take out more than 2 out from freezer at a time - they start coming to room temperature very quickly and will become sticky mess)… I’ve tried doing it, but like I said earlier nothing beats freshly made ones!

How long this can be stored in the fridge? Without freezing
@lifeadmin365
@lifeadmin365 2 ай бұрын
Any freshly prepared meal, if stored properly (once completely cooled and then kept in fridge immediately) will last for 4-5 days (make Sure you keep these in drawer section of fridge or at the back end, so that opening & closing of fridge will affect its temp. However once such refrigerated food is heated, it should be finished off within the same day and not re-refrigerated. HTH

What if gavar strings are not removed? I just wanted to know because I never remove it I just start chopping 😂 is it bad for health ? Millennial Indian here so I would like to know thanks
@lifeadmin365
@lifeadmin365 3 ай бұрын
Hello.. the reason I remove strings for gavar or green beans or val papdi or toovar, is because the strings are pure fiber and do not breakdown during cooking. So when you take bite with chapati/roti, it leaves/May leave those fiber pieces in your teeth. Plus removing them opens up their side areas, enabling quick cooking without making them soggy/limp. if gavar is really soft then removing the strings may not to be that critical. And if you don’t care for the strings coming in your mouth/teeth, you can skip removing the strings 😊 and just go for picking them. I find picking beans like gavar, val papdi/toovar gives a good texture to the cooked bhaji than chopping/cutting, but that is my preference. Chopping green beans is better than picking (IMHO 😂) You can cut rather than pick, if that’s what you prefer. Do what is easier for you 😊HTH♥️

Hi ma'am, I am a student and I have recently felt the need to do meal preperations. I have never before felt the need to eat frozen food, however, it is now necessary for me to do it. Since, I am very new, I have few questions for you, 1) I see that you fully cook the "sbji's" as we normally do, and deep freeze them. How long they remain eatable? I have only done it for tadka (masala? i.e. fried onions, tomotoes puree which is a gravy base) and I see it remains useable for 15-20 days easily. But I have never done for things like cooked rajmas, daals etc, so my question basically is, are other vegetables also going to stay fresh? Should I worry for health etc? 2) For thawing, what I do is, I just transfer the containers from freezer to normal section when i leave for my job, when i come back, its usually not so cold, and i defrost for 5 minutes in microwave, and then heat it in glass container. Is it the right way? 3) Lastly, what are the best vegetables that you would recommend me to cook and in what order, so that if I want to plan my cookings for 3-4 weeks, i am able to eat the one's that stay the freshest in the end. for e.g. start with aloo gobhi, finish wtih rajma etc? Hoping for an answer from you :D

Hi Neha.. if you have shredding disc attachment for food processor, then you can efinitely shred dry coconut… however if you don’t have shredding attachment then you will have to cut in to medium sized pieces and pulse grind to get them to shred size. But this is both lengthy, probably not give uniform shreds and in the pulsing process release oil. But I have done it in the past and it does work
