I make the squidgy chocolate log every Christmas when my family comes over for boxing day. It’s become a tradition. One sitting, bam, gone!! Everyone *loves* it.

I learnt all the basic skills of cooking at school in the 60's. I loved it. The first thing I made was a rice pudding. simple, but took so long to cook! I watch how Delia preps things and this is what I learnt. I have always used these skills and taught them to my daughter and son. As Delia says it is the basics that build the foundations. My mom always says that the Christmas pudding I made at school was the best she had ever tasted. This set me on the road to enjoying it.

I have been virtually addicted to spaghetti carbonara and its many variants and adaptations ever since I first learned the recipe called "Spaghetti with cream, egg and bacon" in Delia's One is Fun aged 12. I made it for schoolfriends whenever they came over, including one (Ian!) who insisted on eating it with a knife and fork! The appreciation of the delicious flavour of a few simple, well cooked ingredients ignited my lifelong passion for food ever since. Thank you Delia.
