I caught it last year and also lost my sense of smell and taste, it took like 8 months before I got it (mostly) back. My smell is still pretty much gone though. Being able to taste but not smell is a very weird feeling.

It’s just a chopped meat or ground meat steak. It’s how hamburg served their meat to lower income people started the. the us people started serving them on 2 pieces of bread calling it a sandwich Hamburg style then getting name hamburger.

Yeah it’s a timeless preparation. I’ve had a few beautiful versions of it here in NYC, including the Svvizerina at Via Carota and the Steak Hache at Le Roc. Italian and French interpretations, respectively.

Definitely not obvious - I appreciate the question! This recipe was largely developed with my fiancée in mind who can’t do nightshades. You can definitely work in tomato into the bolo for a lasagna rossa instead of bianca.

I love that you found an awesome way to add veggies to it. I feel like we eat too much meat and not enough veggies (Chicanos) the hoja santa is cool bc it keeps the flavors authentic. I’m definitely trying that out
