I mean from what I know about Akuma he respects someone's drive to do everything in their power to get to their goal in life. Hence why he repects Ryu for his pursuit of strength, but hates him too because he rejects the satsui no hado that made akuma himself so strong, seeing ryu as unwilling to do everything to get stronger. So I think that's why he respects Elena, cause she's doing everything she can to learn more about the world in her own way with her lively vigor and tenacity.
