An excellent report. You can take it from me, being Japanese. Such a maniac research & dedication to kitchen knives form part of Japanese culture. That's what I've realized recently. A fine way of cutting/slicing is called "kire-aji", aji = taste. That implies the quality of food begins with processing ingredients! Making knives itself looks artistic, doesn't it? In fact, there's more. Types of material of knife is indeed an influential factor on the final outcome! Maintenance (honing) is another intriguing aspect of a bigger picture of Japanese cuisine. Solovair is the quality expected when someone bought a pair of Doc Martens, or any other brand that used to make quality boots (Red Wing, etc). Doc Martens are just cosplaying as quality boots now. Cheap temu boots with a well-known brand stamped on them.

Period. That’s why I can’t stand when fans complain about their favorite artists experimenting. Like ok you don’t like it (or you think you don’t like it) this round; go find other “food” you like until their next release that you do like. There’s PLENTY PLENTY of great music from other artists to find. But goodness I can’t stand endless complaints about how an artist won’t make music EXACTLY like their past. I feel ppl like that don’t appreciate art for real and are just consumers.
