$1,000 Strawberry Shortcake

Not surprisingly, a great strawberry shortcake requires top quality strawberries. And unfortunately, most fruit you can get at your everyday market these days isn't good. Generally speaking, it's artificially large, pumped with chemicals and pesticides, and lacks flavor. Finding a local farmers market or picking berries in the wild is a step up, but Japan takes it to a completely new level when it comes to fruit.
In Japan, and many other countries for that matter, fruit is treated more as a luxury than a meal item. As opposed to an everyday item, fruit is oftentimes seen at holidays, special occasions, or used as a gift. This in turn means that they take their fruit production far more seriously, and I was fortunate enough to discover a company that has brought Japanese strawberries to the United States.
Omakase berries, which come from a company called Oishii (www.oishii.com), are produced in an indoor farm in New York City using an indoor environment that mimics the outdoor growing conditions (rain, air, heat, light, bee-pollination) in the Japanese Alps. The resulting strawberries have an indescribable aroma, a soft and creamy texture, and are extraordinarily sweet. Each sleeve is $50, but they are more than worth it. And, I just had to make a beautiful shortcake with them.
Macerated Strawberries
1 lb strawberries
3 tbsp sugar
Brown Butter Shortbread
2.5 cups all purpose flour
1 cup cold browned butter
1/2 cup + 2 tbsp sugar
1/4 tsp salt
Whipped Cream
2 cups heavy cream
1/2 cup powdered sugar
1 tsp vanilla extract
Strawberry Sauce
3 cups strawberries
2 tbsp sugar
1/3 cup water

I hate to say it because it's just cosmetic -- but I would have considered adding something flavorless to produce a redder color in the sauce. Can be a drop of food coloring or use some of the uncooked, fresh strawberries to create concentrated red that can be added to the reduced sauce.

If you're in Boston and get a chance to take a day trip you HAVE to try out Beth's Farm Market in Warren, ME. (Organic Farm off of Rt 1 in Mid-Coast Maine, about 4hrs north from Boston) The difference in taste of Beth's strawberries and even the best California strawberries is AMAZING. Truly delicious. Then head to Young's Lobster Pound in Belfast for Lobster on the edge of Penobscot Bay. After, hit Rt 3 from Belfast to Augusta to head back to Boston and stop in Liberty (20 min down Rt 3 from Belfast) at John's Home Made Ice Cream stand, LITERALLY THE BEST HOME MADE ICE CREAM EVER!!! (Peanut Butter Crunch is my Favorite!!! My husband's us Grapenut Custard, my daughter's Raspberries & Cream) Hope you're able to take a day trip and enjoy some of our local loves!!! And in Your area, South of Boston off of Rt140 on Long Pond in Lakeville (exit 12 County St/Long Pond Lakeville) the Clam Cakes at J&J Seafood are sooo good, and 10 minutes from there Lloyd's Market & Meats in Rochester. Ask for Anything Jan makes, especially her mashed potatoes!!!😍❤️😍 @lloyds_market on Instagram Hope you get the chance

@@helenarg643 Yea picking your own strawberries in a field is amazing, especially on a hot summer day. Some varieties are a little darker, yes, but you can also find varieties with a more bright red color. The best strawberries, however, are the ones picked right after a long period of warm, sunny weather. It really enhances the sugar levels, and gives the strawberries their perfect, sweet taste. Strawberry season is only a few weeks away now, can't wait!
