I went on this quest maybe 15 years ago. This is what I came up with. Step #1 make a jalapeno butter. Dice up some jalapenos and lightly fry them in a stick of butter. After straining you will end up with a lightly green very spicy butter. Step #2 make your cheese. 1 slice American, about as much super sharp cheddar, about 1tsp cream cheese. Blend together into a smooth paste. Step #3 use a robust bubbly sour dough bread, medium cut. slather with the jalapeno butter, slather with the cheese paste. Cook both open faced at a very low temp until brown and melted and marry the two halves. Low and slow is the key to super crispy bread. Bacon would very likely elevate this. Now I'm hungry again, thanks.

To Chef Brian and Frenchie- Kenji Lopez has an article on the Food Lab about making mayo with animal fats. You should check it out. He did different ones with beef fat, duck fat, bacon fat, and lamb fat.

yea that's what they're called in the USA too and they know that. i think they were trying to come up with a new name that *isn't* a brand name and signifies that it's a cheese-like product, which "processed singles" doesn't do b/c it's too generic, and is still short. hard to do without inventing a new word...

In Australia, we often call American Cheese - "Plastic Cheese" (I am editing my original comment, because it seems like some people got a bit upset. Personally, I had no idea that Kraft Singles had anything to do with the USA until I went overseas in my 20's. I wasn't trying to diss America, I was just pointing out what cheese slices were called when I was growing up. I hope that clarifies things.)

A regular ass grilled cheese will always be the go to, but my favorite grilled cheese I’ve made has been sharp cheddar and aged Gouda mixed together on marble rye.

I will never use mayo for grilled cheese. I don't like mayo in the first place and it ABSOLUTELY will not taste the same as with butter. And I have to say, I have NEVER gotten a bacon cheeseburger and thought "I shouldn't have gotten the bacon". Bacon makes EVERYTHING better, even ice cream.

Geez. Look at these Rookie Chef guys! Losers! Okay,,,Is the Algorithm helped? Good. It's funny that you put this up. I had to drive from Las Cruces, New Mexico to Santa Clarita, CA today for work. Change of project. Anywho, I only had some white american cheese, a sesame seed hamburger bun, and some mayo as I hadn't procured supplies for the week yet. I made that into a grilled cheese and it's such a true thing. It will make anyone happy....especially someone that drove 13 hrs and 740 miles after only having a bagel and some cream cheese on the way out of the last hotel. Always great to see ya guys!

Use mozzarella sticks! Super crunch. I also like havarti when I feel like spoiling myself. Maybe dunk your grilled cheese in hollandaise? you need something to dunk them in.

If you melt wagyu fat and than solidify it back wouldn't it make it softer? Especialy if you put other things (like egg yolk and maybe a touch of mustard - do you put mustard in the mayo? No, just me? Ok) into it would this make it spreadable? Hollandayse on toast sounds lovely😊

Thats not a perfect grilled cheese, it wasn't browned properly, thus it will be greasey......Guga then ruins it with bacon and A5 crap. Quit watching Guga because he has no clue what regular folks eat. He makes disgusting crap anymore.

My grilled cheese: Thick cut white bread with garlic butter on the outside Double layer cheese, at least two types (yellow/white cheddar, Monterrey/colby jack, Parmesan/ mozzarella, or any mix) Sliced mushrooms or black olives in the middle Cook medium-low and cover with a lid to help melt the cheese all the way 😋🤤

I think the biggest improvement I've made to my Grilled Cheese game over the years, is toasting the inside of the sandwich first. I switched to Pepperjack Cheese first, seasoning the inside with garlic powder, then butter the cooking surface not the bread, then finally toasting the inside first... Honestly try it, toast the inside first, its just an extra few minutes and you get an easy way of hiding the "first one always sucks" by smothering your mistake in cheese. On a side note... any grilled cheese made with pre-sliced cheese has to have at least 2 slices, if it's just one slice its toast with cheese flavoring. Honestly even if you slice a wheel/block yourself and get a thick slice, I don't think it'd melt well enough as is and you'd be making a Gordon Ramsey cheese block sandwich travesty instead.

Cook your thin sliced bacon in a pan on medium-low heat with a LITTLE bit of water in the pan to render the fat and preserve the bacon. It will come out SO perfect and crispy!! It's divine.

Really digging your work. We just returned from a trip to NY, listening to SYWGF on the way home. This after lunch at Le Rivage on the rainiest Saturday ever. We went for the French onion burger. Amazing. Great space. Great staff. Killer burger. 10/10 would highly recommend.

The ultimate cheese/bread combination will always be Welsh Rarebit. Toast topped with a cheese sauce made of cheese, egg, English mustard, Worcestershire sauce and ale. Then put onto the toast and grilled

When I was a kid we used to have that for school lunch but they put the cheese sauce on saltines (soda crackers.). I’m guessing that the cheese sauce was a bit less sophisticated. In hindsight, why no toast?! It was still in my top three school lunches.

I've tried both Mayonnaise and Butter on a grill cheese sandwich and it's BUTTER all way. However I will use Mayonnaise if I had no butter a that point in time ....and having no butter maybe considered a crime lol 😂😂 Cheers 🍻

Oh my goodness, hasn't anyone heard of or remember a patty melt? Guga just made a grilled cheese sammy, a bacon melt and a beef melt without onions. Patty melts were very popular in diners across America up until the early 80s. They're just a burger patty in a grilled cheese sandwich with grilled onions, cheese on both sides of the burger, delicious and easy to make at home too. You act like he created some new thing when he obviously didn't.

I dont always do it, but sometimes I like a thin spread of mayo on the inside of the sandwich, and I'll do something weird like a Havarti and Muenster, or a Colby Jack and another type of cheese..usually 2 types of cheese inside. I like the idea of provolone though! Seems almost perfect as a second cheese! (..just anything but Gordon's monstrosity of a FAILURE) 🤮 Leave it to a multi-millionaire celebrity chef to F_CK up the easiest dish. I mean, COME ON!!! WTF?????? 😡🤬 Why didn't he just break out some Stilton and Casu Marzu? It could have been worse, right? 😂 ....anyone ever dare to use those 2 in a grilled cheese? Lol

I agree, that grilled cheese Gordon Ramsey did, if someone made that on Masterchef he would have thrown it across the room. But because it was his he acted like it was good. I recently made mayonnaise with a quarter of the oil replaced with bacon fat, and that contributed a ton of flavor, but the oil kept the texture right. I also used dill pickle juice as the acid. Absolutely incredible on a burger.

Listen working housekeeping at a hospital I would eat in the cafeteria periodically…. THE ABSOLUTE BEST sandwich I got from them was a sandwich I instructed them on how to make(essentially a melt of sorts). So, at this cafeteria you could order grilled lunch meat sandwiches that usually came with 1 slice of cheese (that doesn’t work for me) However, their grilled cheese came with 2. So I start by telling them I need a grilled cheese on white… but simultaneously I need them to take slices of bacon and slices of lunch meat Turkey and chop them up together in a mix. Then they are instructed to place it on the flat top. Toasting the grilled cheese slices separately while heating through the bacon Turkey mix IN THE CLARIFIED BUTTER that all flat tops usually have on the side. Then scoop it all up and place it in the grilled cheese. Slice it and you’re good.! While salty it was by far my absolute favorite thing to eat at work. But it has to be made the correct way and mixed/chopped together correctly or I promise it doesn’t taste the same. I’ve tried doing it at home with different brands of Turkey, cheese, butter etc… it’s never the same. I’m convinced the flat top just adds that last bit of difference. … speaking about it now I need to run down to the hospital and order 2 or 3. Edit… it is American cheese. Gotta be a good brand.

Two things: 1) In a typical NY diner, I’d guess one-third of grilled cheeses are with bacon, and 100% of mine are. No tomato, though. I think it messes with the texture. 2) Chef B, please consider how bacon is made. You might want to re-think your comment about thinner-cut bacon being more salty “because of surface area.” If bacon was salted AFTER it was cut, you’d have a valid point, though

"Grilled Cheese" is always 'American' Cheese (single type) because of American advertising and experience. Yes, you can make it with different cheeses and cheese blends and still call it 'grilled cheese'. but in your restaurants I would expect to see it listed as, to avoid Customer anger and confusion, 'Grilled American Cheese Sandwich = $1'; 'Grilled Cheese Blend Sandwich = $5'; 'Grilled Cheese Blend Sandwich with Bacon = $10'; and 'Grill Cheese Blend Sandwich with Waygu Steak = $100'. I have seen but never tried the mayonnaise spread grilled cheese sandwich. I prefer my mayonnaise on the inside (after it has been cooked) with homemade (21-day) sweet pickles. 🤤I also like my plain grilled American cheese sandwich with a bowl of Campbell's Tomato Soup (made with milk). 🤤

LOL. Right now I'm having a toasted cheese with Velveeta cheese & bacon on a Kings Hawaiian mini bun, using Kerry Gold Butter and bacon fat to brown the buns. YUMMMMMMMM! Wait.... what an idea you mentioned. I have 40 ounces of Wagyu fat in my fridge right now, and making mayo with it sounds like it could be incredible. But of course it would probably solidify fairly quick. I have some experimenting to do.

I use mayo for mine...mixed with wasabi powder! *I'VE NEVER TRIED THIS* - for a waygu or bacon fat mayo, maybe turn the fats into powders using something like maltodextrin and add that back in with a neutral oil...I've made bacon and prosciutto powder before, but never tried adding it into a mayo recipe. So...was that the invention of the Guga-delphia Cheesesteak?

I do a light sprinkle of salt on the outside of the bread while it's cooking, just slight finely ground. Plus, I like mine a little more browned. My mom once almost burned the grilled cheese and we loved them and had to have them that way since. Original 10%'er here! Love this podcast!

First thing you cook is scrambled eggs. *No supervision totally independent thought* "I'm gunna use the stove, pan, all by myself!" Raw to cooked. not reheating, _actual cooking_ 1st time is scrambled eggs 90%. Am I wrong?

Bacon mayo is possible, you just need to heat it till it's BARELY liquefied, NOT HOT, THEN add other ingredients mix it and chill, it will be slightly thicker than regular mayo but still slightly spreadable like cream cheese. Refrigerate for about an hour it should be perfect, OR half bacon half avocado oil makes a thick but perfectly spreadable mayo like whipped cream cheese!

I do love a good grilled cheese but I'm not a fan of processed cheese. On the topic of bacon, try a toasted peanut butter and bacon sandwich. Use natural peanut butter. It's messy but tasty...and it's simple. I use my own dry cured bacon which is not smoked. Great video, gentleman.

If you can keep bacon fat at 80 degrees it will stay liquid enough for the egg to emulcify technically speaking. I say give it a go.

I agree with Frenchie there. This isn't a grilled cheese. A Monte Christo is called a Monte Christo and not a grilled cheese. Think up a new name for it. If you can't think up a name, then calling it "inspired" by grilled cheese is fine. Either way: I want it in my mouth. Very much.

I'm not a huge fan of Guga's grilled cheese sandwich, American Cheese is just not a very good cheese for it, IMO.

I grew up eating ONLY Tillamook Medium Cheddar at home. We discovered American cheese at school. Then....Velveeta. Now we have about seven cheeses in the fridge. My favorite for grilled cheese is still Tilly. Add sweet pickle slices before grilling. Yum. Or deli ham.

Great reaction! Just wish people would stop association with bacon and unhealthy 😒, bread is the unhealthy component here. Overall, I think both are on point. Brian for saying there's nothing wrong with hints of flavour (have to be careful) and Paul for saying simplicity is best. Great work!

I think I preferred Guga's videos before Leo, with just Angel. He gets more time to give his opinion and he doesn't get overridden by Leo's pompous descriptions. Videos are just like grilled cheese, less is more. Also you should take a look at Epicurious "56 cheeses, 56 grilled cheeses: which one is best?" as a follow up to your cheese discussion :)

Nileblue does have a great video making American cheese. Calling it "cheese-sauce singles" really is accurate. Like the ingredients are cheese, butter, milk solids, salt, and an emulsifier. That's cheese-sauce. Maybe solid-fondoo.

anything other than cheese and bread is NOT a grilled cheese. it's just a hot ham/bacon/turkey/kimchi and cheese sandwich. doesn't matter if it's a little or a lot.... grilled cheese is just that. cheese. but that's just my opinion. but those ALL look tasty and amazing, I don't really care what you call it. just put it in my face.

Make a grilled cheese with Kraft Singles (processed cheese sauce slices) and one with Deli American Cheese (not "real cheese" only because it's a blend, not because it's all chemicals like Kraft Singles). I feel like everybody forgets that you can get American Cheese from the deli, which isn't overly processed, and unless you get the very top shelf version, the price is comparable to Kraft Singles. It might take 10 seconds longer to melt

Toddlers are anywhere from just learning to walk, to pre-K aged. Once they're in school they're passed toddler age. So in theory you could have a kid who can't talk yet, attempting to make this if it's that easy. When people talk about toddlers, they're usually thinking of something more like your typical 2 year old, than your typical 5 year old. By 5 years old I looked 7 lol, nobody would be mistaking me for a toddler at that point xD

It might just be my inner child, but American cheese, Wonderbread, and potentially some bacon makes the greatest grilled cheese with next to no rival. I could just be an idiot, but I've tried to make some slightly fancy grilled cheese sandwiches and I wasn't overly happy with the results.

Sodium citrates are used as acidity regulators in food and drinks, and also as emulsifiers for oils. They enable cheeses to melt without becoming greasy. It reduces the acidity of food as well. It is generally considered safe and is considered GRAS by the FDA. [1]
