I’d love to know how cheese is made with beans. I know I can benefit from eliminating cheese and dairy from my diet but I’ve yet to make that happen. I even bought nutritional yeast but have been afraid to use it so far.

@@jenniferwinsor7740 there are many recipes online. just look up Vegan cheese. 1 basic recipe for mozzarella uses, soy milk, unflavored coconut oil, nutritional yeast, lactic acid (or regular vinegar) some salt and tapioca starch. mix all and heat in pot at low heat until thick and store in fridge overnight. You have meltable, grateable cheese .

@@user-sd1qr5il6kwell, its strong, all right. Try it mixed with a little umeboshi plum. Not the ones with all that artificial stuff in them. Eat it on a rice cake. Also its okay as a filling with green onions and or the umeboshi for veg sushi/ nori maki. But its still strong tasting. It's very good for heart disease, right? I remember my macrobiotic instructor saying natto is very good for women. The estrogen in the soybeans is closer to being bioidentical to human estrogen.

I have been experimenting with different varieties of Heirloom beans. I had no idea beans could taste so good. Some of them are extra meaty and flavorful. Heirlooms are a little more expensive but can make dinner a special occasion. I get mine from Rancho Gordo.

Soybeans especially the gmo soybeans are heavily sprayed with chemicals. Organic tofu is a high priority for me because of this.

Soybean is a subsidized crop, so organic is highly recommended. Similar to how corn is grown for the corn oil, high fructose corn syrup, grain feed for the animals, etc, soybean is subsidized for the soy protein isolate, soy oil, etc. You need to source your soybean from reputable growers, and the organic label is one way to do so. Always check the ingredient list too.

Glyphosate is a plant/weed killer. So they wouldn't spray the plants with that otherwise the soy beans plants would die.

I consume tofu regularly in my household but a friend of mine told me tofu and tofu products are highly processed foods, please clarify. Should I just stay with soy beans that I cook them myself instead of tofu products?

Tofu is an ancient processed food but it is not ultraprocessed. If you want to get technical, Cooking anything is a form of processing. How you process the food makes a huge difference in health. Making tofu is not like making a soy veggie Pattie. The Pattie can be spiked with all sorts of additives and preservatives and ultraprocessed ingredients. There are healthier tofus. You can eat whole soybeans if you like as well.

You mention the “Hawaiian diet” but Hawaiian refers solely to the aboriginal people of Hawai’i, so a “Hawaiian diet” would solely consist of foods of the aboriginal peoples and many of the foods on your “Hawaiian diet” list are not Hawaiian, including tofu, obviously, as a matter of fact the only Hawaiian foods on that list are taro, poi (which is just taro again, it would be like listing potatoes and mashed potatoes as 2 separate foods), sweet potato and seaweed.

As long as I eat soybeans, I have no hot flushes. On vacation I could hardly eat any soy products, my breasts tightened and hurt, I got hot flashes, it was immediately terrible.

I do wonder who started this misconception. Phytoestrogens do not increase breast tissue. This probably began with a misunderstanding of estrogen and phytoestrogens. My son is in his forties, and I has eaten soy nearly daily since he was a toddler. He's very healthy, and has never had an issue that supposedly can happen my husband is in his sixties and has eaten soy several times a week since his twenties with no issue.

Are you concerned with endocrine disruption eating so much Tofu? In the US most soy is GMO. I have low estrogen. Would this be helpful to eat if it is Organic and Non GMO?

Unqualified opinion based on my own research: always, ALWAYS consume ONLY organic (all are non-GMO) from a reputable source. In the US: Soyboy and Hodu brands are the finest you can buy. IMO. Also watch your serving size. That matters in your overall health goals involving Tofu. I season cut up cubes and throw in the air fryer and it's awesome.

That's specifically in the context of a get-together during which certain foods that should be refrigerated are left unrefrigerated too long. (A classic exercise in Epi 101 is to figure out which food was the source of food poisoning among people who attended a church picnic, but I'm sure that non-church events can also turn healthy foods into dangerous foods as well ;).)
