My question to you is, are taxis expensive in Spain, are they a set price like Mexico? Is there Uber available in larger cities? Appreciate your videos, they are well thought out.

In the specific case of Madrid (other Spanish cities are the same), taxis charge whatever the meter shows. Uber is available in some cities, not all by any means. It is available in Madrid, along with Bolt and Cabify.

You mentioned taxis, are there several especially in the early mornings? What about when leaving the hotel back to the airport, is it difficult to order a taxi when staying in the city Center? What about traffic to get to the airport?

There are always taxis at the airport. Very easy to order a taxi staying in the center, the hotel can order one for you. Traffic depends on the time of the day and the day of the week.

I just returned from Madrid on Friday and yes try to eat at local restaurants rather the the hotel restaurants. The hotel restaurants are too expensive and not always the best quality. My coffee and a croissant at a cafe on Gran Via was no more the 7-8 euros.
