Not to burst your bubble, but perishables are some of the most popular items for traveling merchants to buy and sell, specifically because they're perishables. They move them from the place of production, to the place it's needed. They just cant travel far with them, so they constantly buy and sell whatever is grown locally to people a little further away. What's rly suspicious, is how he can afford all these stalls and carriages xD.

And while it's rare that merchants would only ever deal in one product, unless it's their own home grown signature product, you would naturally have specific knowledge and connections as an organically acclimated traveling merchant, so you would have known the most efficient routes for certain crops that would earn you the most. And the most demand he knew existed wouldve been for cabbages xD. But certainly, ig we're applying a lense of reality to the situation, he should carry other things, also things that aren't perishables, but then he loses almost all comedic value as the cabbage merchant.

Theory of the Cabbage Spies Life: A water tribe warrior spends a night at a earth kingdom brothel and moves on the next day to battle the fire nation troops. The now single mother does her best to raise her son with the help of her cabbage farming relatives. The boy grow's up primarily raised by his farmer relatives and is the village outcast for his heritage and upbringing. He has a miserable life but one day discovers he is a water bender and learns his origins, but his family forces him to keep it secret. Some time later, as the Fire nation army invades the Village, he is told to run because the fire nation still has a bounty out for water benders and some in the villagers know his secret. He runs and runs and finds himself in the swamp, where he meets other water benders who teach him plant bending. What better plant for him to practice with then the cabbages that he is so familiar with (and are mostly water). Despite learning from other water benders, he just doesn't fit in with the swamp benders life style. Between this and a strong desire to know how his cabbage farming relatives are doing, this is when I think he learns to see through other cabbages. (Crystal ball visions are a thing in AtlA, Aunt Wu. His is just a Cabbage) He sees his family being arrested by fire nation solders for harboring a water bender for years and leaves the swamp. While searching for his family through the cabbages he sees and odd interaction between two old people one from the Fire nation and one from the Earth Kingdom. (White lotus members) He spies on them and eventually confronts them to try and gain their aide in finding and/or rescuing his family. They refuse. He sees another opportunity to gain what he wants. He turns himself in to the Fire Nation and makes a deal with them for the safety of his family, to be their spy, and he has enough information to pretend to be a member of the white lotus and gain information from their networks. (The white lotus uses merchants to smuggle goods and people. The merchants must know some white lotus secrets and hear some of the news and happenings of the organization. So he has the idea to infiltrate them as a merchant.) The Fire Nation agree and make him a spy and over time feed him propaganda and make his family rich and overseers of all cabbage farms in the Fire nations Colonies. (So he always has another cart of cabbages to take to the next town.) His repeated poor treatment by the Earth Kingdom and Fire nation Propaganda eventually truly convert him to their war and he starts to spread it to disgruntled members of the white lotus he meets in his travels. They later become the foundation for the Red Lotus. It's through these white lotus members and their news networks he always finds the A gang and the fire nation repeatedly tracks down Iroh and Zuko. After the war he and his family have become rich through the exploitation of knowledge, blood money, and cabbages and so are in a perfect position to capitalize on the formation of republic city and advancement of technology. Eventually founding Cabbage Corp. the financial backer and beneficiary of the Red 'Lotus'.

Wasn't Avatar City also built in a formal Fire Colony? A colony would make it easier for him to pass info onto Fire Nation soilders without drawing too much attention while also being able to come and go as he pleases. After the war he would have a mix of Earth Kingdom and Fire Nation money that would be combined post war. This would make a great place to start a business and own land as rebuilding begins.

Nux, a fun fact about Ember Island Players, it was inspired by a recap episode from an older show named Reboot. At the end of the final episode of season 3, there is a 'recap' of season 3 done accurately, but by actors in a play much like ember island players. Yes EIP expanded upon the concept and made it better, but its neat seeing where they got the idea from.
