I’m in literal tears at the end of this. I love this so much. I’ve been having a rough couple of weeks because of all the killings and violence here in Nigeria. I was dealing with Survivors guilt and the fact that I lost someone I knew to police brutality. I’d been having trouble sleeping as well as focusing on my work so I came to KZbin to find something, anything. Alvin Zhou, this video brought me peace. And for that, I’m saying thank you. The ambience, the fact that there were no words, your beautiful kitchen. It wasn’t too many things at once. I had to focus on the subtitles and the music helped me through it. What more? It was baking, my favorite thing in the world. I don’t know how, I can’t explain it, but my brain relaxed through all this. For the 10 minutes of peace you’ve given to me, in the middle of an absolute dumpster fire; I’m grateful. And I appreciate you more. Thank you.

@@thegreaser not necessarily improvements but enhancements and tweaks to my own personal taste. Use Lindor milk choc and Lindt 90% dark in the wet mix and then same choc again in the filling. Also, a little less coffee. We have a bean to cup coffee machine so all my espresso ice cubes are from that. Salted butter also browns up nicer than unsalted and gives a more caramel note after the process. Have you tried Alvin's recipe?

Recipe so you don't have to memorize it INGREDIENTS 2 sticks unsalted butter (225g) 1 tbsp espresso powder (6g) Coffee ice cube (30g) 4 eggs 1 tbsp vanilla paste (15g) 2 1/4 cups white sugar (450g) 1/2 cup dutch-processed cocoa powder (45g) 1 tbsp espresso powder (6g) 1 tbsp kosher salt (9g) 8 oz melted 75% cacao chocolate (225g) 1 1/2 cup all-purpose flour (215g) 3.5 oz chopped milk chocolate (100g) 3.5 oz chopped 75% cacao chocolate (100g) 6 oz chopped 75% cacao chocolate, for topping (170g) Method: 1. First Brown the butter over medium-high heat till golden brown bits pop up on the bottom. 2. Take the butter off the heat and add in espresso powder. Add a Coffee Ice cube (wth is that) 3. In a large bowl crack FOUR eggs (WHY JUST WHY?) . Add sugar and vanilla essence 4. Beat till fluffy. Sift in cocoa powder, MORE espresso, and salt. Fold in with a spatula. 5. combine butter mix and sugar mixture. Add melted chocolate. Sift in the flour 6. Chop up the chocolate and fold most of it into the brownie batter. Pour batter into the pan 7.Add in the rest of the chocolate over the pan. 8. Wrap the pan in tin foil, put it in the fridge, and let rest for THREE days *Three days later* 9. Take the pan out of the fridge and tear of plastic wrap. 10.Preheat oven to 180°C or 350°F 11. Bake in the oven for 25-30 minutes 12. Take out of the oven and quickly wrap in tin foil and shove in the freezer *30 minutes later* 13.Move it to the fridge and let rest for another additional 24 hours 14. Enjoy :) Ur welcome

@@minajones8341 don't rely on the coffee flavor being undetectable. If you really don't like it, you might still be able to taste it. I joke sometimes with my family about this because it's almost like a superpower being able to identity coffee in things. In fact, I thought that some chocolate tasting like coffee was a false positive but I just learned now that some people put coffee in chocolate so I might actually have been right. If you really don't like coffee don't trust that you won't notice the taste. Our brains are really good at picking out what's bad for you (I can also taste how close to spoiling milk is ever since I got food poisoning).

I have no idea who you are but this video showed up in my reccomendations. At one point a few years ago, I baked brownies all the time, usually for my friend. However, since then, I've not been baking. I don't know what it is about this video, maybe the lighting or the music, but it made me really emotional, kind of like that end scene in ratatouille when the critic tries the food. Of the amount of people watching this, I'd like to give my feedback as someone that has actually made this recipe. I did it two ways. 1. Followed video and recipe exactly 2. Only chilled batter in the fridge for 2 hours, baked, put in freezer for 30 min, transferred into the fridge for another 2 hours, then ate to see if the difference was really that noticeable. Honestly, the 100 hours (or at least waiting time of 72 hours in the fridge, shock cooling, and additional one day of waiting after baking) did make a big difference. The biggest difference I noticed was not in flavor. The flavor both times I made it were pretty similar. The greatest difference I noted was that if you do the 100 hour method you get brownies that are moist and stay that way until they're gone. If you just do the recipe, bake, and eat (more or less) I got brownies that were unbelievably dry. (Side note if you just make them and don't wait the 100 hours and store them in the fridge, they do get a little better but still not the same) I don't think I would say the 100 hours is actually "worth it" so to speak, but I think just the planning ahead to have the brownies for the weekend is. What I mean is, I think it's worth it but telling people or myself these are 100 hour brownies seemed to overhype the end result making me a bit more disappointed. With that said, I will definitely make them this way from now on, it's just my mindset will be this is the process I go through to have brownies for X day, the weekend, whatever. I just need to remind myself that the "100 hours" isn't turning them into something BEYOND PERFECTION or anything.

@@gguktae3502 Not at all! I've made this a couple of times. The first time, I only put in the recommended amount of the coffee, and you basically couldn't taste it. It just made the chocolate flavour really strong. The next few times I've made it (I've made it like 5 times now lol), I upped the coffee by a lot, so you can taste it pretty strongly, and omg it's to DIE FOR.

Finally was able to eat the 100 hour Brownies after the 100 hours. Wow, just wow. The fudgy consistency was a huge hit. The flavors were perfect, the complex flavors from the batter really mellowed out. I highly appreciate this video! It has given me new knowledge and new techniques in baking!

Caffeine works on people in different ways, if he is like me, he will have a small burst of energy (of course to play persona 5) and then just feel warm and comfy and happy, sort of like an anti-depressant its amazing how the human body can react with different substances. But those brownies sound amazing, sort of reminds me of how my grandma used to make 2 day brownies for me and my sisters.
