When you return next time, you should ditch the GPS for navigation, although I imagine you might want to record your route with it still. Instead use the 'fietsknooppunten' system for which there are multiple websites / planners out there. They are basically a set of numbers you can write on a piece of paper or the back of your hand, and then you just follow the signs besides the road for those numbers in order. This system is meant for recreational cycling and will send you over scenic routes. It's also quite easy to extend your route by following a couple of different nodes than you initially planned to take to your destination.

The building in amsterdam you pointed at, and did not know what it was, it is the Rijks Museum, it houses paintings from Rembrand, etc..

Wet, cold, rainy, you could have stayed in England... Better luck next time! And yes, there are routes much better than following car infra, quiet, interesting, and not even longer. Use another planner!

The bit I was moaning at wasn't in the original plan, because I was getting piss wet and by that time awfully cold. I got the planner out and made a straight line!

Yes. Also the same back home here in the UK. However, it's perfectly natural behaviour and thus is tolerated. Arrive late, leave early, leave no trace and all is well.
