I have 7 books on backcountry meal prep, 3 on dehydrating. Chef Corso could have the most knowledge of them all. I will be watching every video on the channel. I actually canoe the backcountry here in Ontario Canada, so all this info applies. Corso get up here and try it. Killarney provincial park and Algonquin are tops !

Thanks for the kind words KC! I'm working hard to provide some elevated tasty options for folks. I get out whenever I can and I want the meals to be easy as well. May I use this as a testimonial for future use? Cheers!

I started cooking pasta from scratch on my last trip - with beef jerky and dried porcini mushrooms, olive oil and parmesan. It was delicious - you just put the jerky in first to let it hydrate along with the pasta, as well as the mushrooms. I have to use penne - cos I am gluten intolerant but I will try spaghetti or noodles at some point. I also did gluten free gnocchi which was even quicker, those take 1-2 minutes so a massive success. I did cheat with pasta sauces for those....but again, virgin olive oil, pepper, salt and parmesan as well. I love cooking outdoors...great channel!

Yes! I like prepackaged tortellini that has the cheese in it and some pesto sauce. Add some basil leaves, and some of the packages of parmesan and red crushed chili flakes you get from the pizza shop. All you do is boil the tortellini, drain and add the sauce at the end. Easy and filling when backpacking. If you have some bread, you can dip the bread in the sauce when done. One of my favorites. Chicken noodle is a great suggestion, but I just carry the canned ones. I'm too lazy when on the trail after hiking all day

Awesome! I kind of like Angel Hair, and a 3 oz. container of Kraft Parmesan Cheese makes a perfect container to keep it from breaking.

About to head out on a backpacking trip and going to make some Cacio e Pepe. Very excited and surprised it wasn't on this list. Maybe you can do one soon and we can compare notes!

I love doing pasta on the trail! Our favorite is Mac and cheese we just cook the pasta add cheddar cheese as it holds up well for multiple days and then some tuna it’s delicious. We had AT hikers looking at our food. For a meat sauce I ran out of time and tried dehydrating hamburger to use for spaghetti but I didn’t like the taste so I did opt for freeze dried hamburger and it was actually tasty too. Another favorite we did was chicken, bacon, ranch pasta. So glad I found your channel for more ideas for the future trips! :)

Hello, would you be so gentle to tell me what chili Mac is? P. S. Never mind, sorry disturbing you, I've got it (google)

I've always enjoyed sauteing up some veggies (zucchini, mushrooms, etc.) and adding a bit of pre-made pesto & some parm shavings. Don't even need to do a separate boil/drain. Just add a little water, simmer, & the pasta will hydrate on its own with just enough water to keep the pesto as a sauce. But that was with a camp skillet so not sure how it'll work on the tall camp stove pots

Buongiorno chef Corso! Your surname seems to be Italian))) but I'm not sure! So greetings from Brescia, Lombardia. Spaghetti, vermicelli and fusilli are my favorite. Pasta al pomodoro (ciliegino =cherry) is great.
