Caviar will go start to go bad after being opened in a day. Because air gets trapped in there with the eggs. Its best to eat it the day you open it because of the cost.

11:25 This particular egg could still be fertilized. The time at which the duckling starts forming is 2-4 days while being incubated. I don’t know where they got the eggs but if they were being sold commercially, the males would not be housed with the females so there would be no way the egg would we fertilized.
