I made this dish for dinner, last night, with some rapini from a friend's garden. I chopped and blanched the rapini beforehand, and then dried it in a clean kitchen towel before heating the wok. The finished stir-fry was on the plate in no time and was absolutely delicious! Thanx, Marion. Stay safe and take care of the family. 👍👍

Hi Marion, I am a recent fan of yours from Melbourne and since being in iso and wfh for the past 5 months your cooking has inspired me even more to cook thai and asian cuisine. Tonight I made this recipe of yours but I tweaked it to our taste and added some different veggies. Thanks so much. We love Thailand and have been twice, we went early this year before COVID really hit. I have always loved to cook but I can honestly say you are a huge inspiration!! Keep doing what you do best. You have a lovely personality.

I usually can't stand ginger but I diced it into tiny pieces and it went really well with this dish, which is delicious btw! I used more udon noodles and also 3 carrots (cut into strips) and a bag of spinach (just roughly cut). For the sauce I mixed soy sauce, teriyaki sauce and hoisin sauce (about 3:1:1). Oh, and I also topped the whole thing with dried garlic, which gave it some additional spice (don't use too much, that stuff is strong!).

i'm vegan and substituted the meat with tofu that i crumbled up. i flavored it with soy sauce, hoisin, a little maple and rice vinegar, and cooked over medium heat until most of the moisture cooks out and it resembles the texture of ground meat. this dish turned out so good! next time i'll probably add in some minced mushroom and eggplant to the tofu mixture

I just made this recipe. It’s quick & delicious. A bit non-traditional, but I added a knob of butter to balance the soy sauce. I felt like the sauce needed some body. It gave the Udon an unctuous quality. I’ve seen Marion do it, so I’m in on adding butter 🧈 to the occasional dish.
