The restoration is on the oldest tool I have worked on so far . This is a food chopper or hasher patented by L.S. Starrett (of Starrett tool fame) in 1865. It was one of his first patented inventions. You can see the patent here: patents.google....
At the time of production, this was used mainly to dice meat in to smaller pieces at a much faster pace than doing it by hand. The rich or businesses would find this affordable as it sold for $10 USD in 1869, which is equivalent to ~$2000USD in 2020. (thanks to @HandToolRescue for the info he has done one as well )

La restauration concerne l'outil le plus ancien sur lequel j'ai travaillé jusqu'à présent. Il s'agit d'un hachoir ou d'un hachoir breveté par L.S. Au moment de la production, cela était principalement utilisé pour couper la viande en petits morceaux à un rythme beaucoup plus rapide que de le faire à la main. I liked the black primer more than the earwax color but still a very good restoration.

Why do we only ever see half of the item being restored? the other half makes it's appearance when it's time to demonstrate what it does??

Excuse my ignorance but shouldn't all the welding, drilling, filing and sanding be done before painting? Are the paint, wood finish and lubricants food safe? Inquiring minds want to know.

I can see you are an impatient man I'll give you my answer in 6 months after consultation with the food ministration board on their guidelines, the department of Environment safety with food-safe paints and the guild of restoration KZbin channels as to what format the repair should be taken in, in the meantime I will notify the museum to not use for cooking purposes but display only. we thank you for your enquiry
