@@paulngan4750 And the thing is, here in the US at a high-end restaurant, such a dish actually would cost $188 dollars, but US dollars! I mean, yes those are expensive ingredients, but that’s just too much. I’d be willing to pay more US dollars for this dish (say $50), so to see it priced so reasonably and in such a nice setting, I was impressed!

One of the more interesting preparations. Pureed spring onions as a onion-tasting green food dye is worth remembering. Also, the method for wok-cooking crab meat and scallops for inclusion into fried rice was very interesting.

Yes scallops are common in fried rice but the OP’s comment was that the method for cooking crab and scallops was very interesting. I believe the comment was in relation to the scallops being of a wet texture. This is the Hokkien inspired method, i.e, Hokkien fried rice is served with a layer of sauce.

I've been going to HK since I was 11 in 1979 every year until 1993 and sporadically after. I have never set foot in any expensive place there as my late uncle always brought me to the traditional places and the food was heavenly and will never cost you an arm or leg.

Good work skills and the char is worth all that. Non asians wouldn’t understand the effort gone to making a good fried rice imagine if Jamie cooks using Chili jam and coriander along with garlic aioli as a side dish 😂 in asia the Chinese fried rice is as good as a main dish after all that greasy roasted meats and it’s a meal by itself. Fluffy omelette rice , yum 😂

The price is reasonable as it's reflected in the ingredients, caviar and crab meat. Some other hotels use wagyu beef and foie gras and charge even more like HKD 385.

while crab and scallops are delicious and making a spring onion puree for the rice is a cool concept...this is not a fried rice id wanna really try tbh. seems more like steamed rice owo im sure its still tasty but. id stick to traditional for this one. xD

This is technically fried rice WITH caviar and seafood. But it's a version of a Hokkien fried rice in a high-end setting. That scallion paste is interesting and something i never thought of. I may give that a try.

The total HK$188 should be figured like this : 100 goes to the rent, 40 goes to the labor and others, the food itself is around 25 - 30.

HK at a high end restaurant friend rice can be $50 or more. it’s not necessarily about the dish itself (although usually uses better ingredients) but it’s just that there’s a lot of expensive restaurants in HK being one of the most expensive cities in the world. No different than paying $40 for a salad at a high end place in the states.
