Nope. He's working from a French cookbook, written in French. He's referencing methods, techniques, ingredients in French as a result. Not pretentious.

I mean I would love just a series of Ben and James going through this book and cooking stuff. The whole video being packed with technique and language and everything is just a pleasure to watch. Makes for a nice "complicated" break from the more easy week night recipes and different challenges.

Yes! I loved watching them be all professional, it's not a side we usually see of chefs here on KZbin. There aren't many classically trained chefs with this kind of format; they tend to be more serious and to the point

@@MildredCady It won't work because the book doesn't contain any detail about the techniques mentioned. Is intended to be used by people that already know french cooking, at least at the professional level. But if they throw cross-reference material explaining the basics of those techniques it could work. Also, it would be better if each of them work independently in the same recipe and compare the results at the end.

@@Imman1s it seems like they they usually plan recipes for the battles ahead of time anyway so they could each be given the description ahead and then write out a full recipe of what they think that is before the battle

nah the tape cut there - they totally went after him, there was shriekin', and feathers everywhere, and no mercy at all. Then they all three had their make-up touched up and started the tape again :)

The word "interpretate" was 'made-up' much in the same way as all of the words in my current sentence. Interpretate predates "interpret" by quite a long time - in fact, rather than not being a real word, interpretate is the predecessor to interpret. It's considered archaic now, but it's very much a real word. "Archaic" is an interesting status though. Did you know that "axe" is the archaic spelling of "ax"? Yet most people use the former still anyway.

The 'what' is nice to know, but the 'why' is more important. The reason why you start roots in cold water is because they are very dense. Any dense fruit or vegetable that you are cooking, you should start in cold water, otherwise they will overcook on the outside before they are done on the inside. What this looks like with potatoes is that the outside of the potato will be falling apart, and the inside is hard.

How about a two-parter episode using "The Drunken Cookbook" at night and then using "The Hungoevr Cookbook" (misspelled correctly) the next morning. Both books are by Milton Crawford.

The book was cooked by August Escoffier, one of the creators of the brigade style of kitchen hierarchy in classical French kitchens. The size of the chef's hat was a signal of rank in the kitchen. He is one of the pre-eminent names in chef history and many of the techniques he originated are still in use today. And yes, this book is for people that are already skilled chefs, and assumes that you know the techniques needed to make all the elements of every dish.

I am 1000% supportive of this idea. And they have a range of options for space costumes! The iconic white suit with helmet, the navy blue, the orange. Somebody could dress up as David Bowie from his Ziggy Stardust era. It's too bad they didn't have this suggestion in time to have done it this weekend though! It would have been great to do for the 50th anniversary of the moon landing.

Great interpretation! I felt it was closer in execution than even the lecturers. We need to revive old techniques and recipes. I still reference Escoffier regularly and I always walk away learning something new. I would love to see more of these type of vids.

Do the "Sauce Bible". As a trained chef my self, I find nothing but frustration in some of those sauces! Would LOVE to see you some dishes with some of those complex sauces.

Preach! I had an instructor who would assign us a random page from the Saucier's Bible, then we'd all trade them around, and we then had to identify EVERY SINGLE INGREDIENT just by taste! I mean...I'll admit, it really increased the depth and breadth of my palette, but that man was a friggin masochist!

Now I proptly expect an episode on "Science in the Kitchen and the Art of Eating Well" by Pellegrino Artusi, written in 1891. It is, quite litterally, THE italian cookbook (also you are always absolutely hilarious when you interact with italian people on set)

If it ever makes Ben feel better, he was right about the potatoes being balls, boiled then sautéed in butter, I actually have a recipe for pomme de terre a la noisette and Escoffier was notoriously finicky with his food

You should do a Betty Crocker cookbook for your next challenge, my favorite from way back when was called "tamale pie." It was basically tamale fillings in a casserole with cornbread on top. Make it "cheffy!"

I think You may less joking about French language (just because this is so stupid), and more reading a books. Real books in which 80-100 years age best chefs put thousands of working hours and thinking more before write or say something...

Recipes from a Halfling's Pantry is a really good one in my opinion.
