59 steps to forget. The same results as my potato fritters. Mash the potato, add flour, tsp of baking powder, cheddar cheese one egg and half a cup of milk mix together let sit for 10 mins. Put some oil in pan medium low heat, test pan by a small drop if it starts slow sizzling the pans ready. Drop a hreaped tablespoon of the mixture into the pan, usually four separate scoops around fit a pan. When bubbles form on top flip and when golden brown on both sides about 4mins total, Eat them quickly while burning your hands

There is an easier way my grandmother had leftover potato mashed potatoes. She would take if you want a little bit of cheese. She put that in there and make it into a pancake and put butter in a skillet and fry it. It’s cold a potato pancake and they are so good. You don’t have to go through all which she did, or you can make mashed potatoes and do it but we always used our leftovers. My grandmother was from the depression area in 1930.

This is not "potato pancakes" it's a bread, made with flour and yeast, as well as potato. It's lighter than a 'tater pancake, but still very fillling, and a joy to eat. Beloved of Ulster folk - no Big Boy's Breakfast (AKA Ulster Fry) is complete without something very like like this, and the cheese feel like it would be a really nice addition.
