The use of potato in bread making prolly started in Europe when their staple food potatoes (cooked potatoes from dinner left-over) were added in making bread for the next morning, and they found out that the resulting bread had better texture and won't stale as fast as those without potatoes. I think the japanese copied this technique in their (soup-starter) sweet dough breads like dinner rolls. But the dough did not contain cooked potatoes and use a small portion of cooked flour/water slurry as a starter to their dough. The point of cooked flour/water slurry is for the yeast to have a better food for their growth (like sugar) than the uncooked starches of the raw flour. Just like an additive for better yeast growth and dough development. Of course, this is beside the point that potatoes can impart a different kind of taste for the bread. I think the resulting dough is softer and can not stand up-right well on it's own properly. Maybe because the percentage of gluten in the recipe will be less because of the added cooked potatoes ? That is prolly why those japanese soft rolls are usually inside a colourful muffin cup to make the roll more up-right like a panetonne ?

Contrary to some comments, I didn't think these looked difficult at all. Just needed multiple risings. Good for a beginner. Both of these looked incredible! I was really skeptical about the first dough looking so sticky, even after rising. It absorbed every bit of the bench flour. But it worked. It was the softest, springiest bread I've ever seen. Could imagine that warm, with butter just melting into it. The second dough somehow ended up being stiffer from the beginning. Which meant it was going to hold up well with the mozzarella. That looked so tasty. Wonder how many other cheeses could be used instead, or in addition to mozzarella. And maybe chopped pepperoni or salami inside? So many possibilities. Yum.

You won't know until you try it! They are very flexible!! When I use leftover mashed potatoes, I warm the potatoes up a dad on a low temperature in the microwave! It makes them easier to use and get her recipe! Love them every time!
