I strongly disagree with heating or boiling the milk when using citric acid. Heating the milk above 47 deg cooks the proteins making the curd grainy. Which means you need to make emulsifier. The curd will seperate long before boiling temperature. Only heat the milk till its warm.

Where I am in Canada we do not have access to organic cream cheese but I do have access to raw, organic, grass fed milk.

To each his own! Our cow actually is fed only grass on organic grasses so this works well for us!
