Nice video. Lots of good info. I've not seen the CAY CAY before either. In terms of using the Flair, I use the original version. You may want to try the technique I use which feels easier to manage pushing the lever. I turn the machine so you're facing the long side and have it close to the edge of the counter (for better stability and control), and then use one hand to brace the left side of the machine while at the same time pulling the lever down with your right (or vice versa). You may need to adjust the pressure gauge face to show more upwards to view better.

Hey Eric. Thank you for the comment. And interesting about the usage of the lever and makes sense. I am since finding I can do a kind of lean in technique as well. One thing I love about the Flair is the community behind it. There is so much help and advice from people using it. ❤

Recently, I bought the Flair Pro 3, and honestly, I am not happy with it so far. I’ve tested it many times using the same beans and the same grind size. However, I always get a double espresso (36 grams) in varying times, ranging from 25 to 47 seconds. What could be wrong? Could there be an issue with the chamber?

Hello Crac, interesting. I don't know. Perhaps tamping could play a role? A positive is that I believe the basket geometry is more forgiving in timings. so, the timings don't have to be bang on each time. With a 58mm basket the shot can go from sour to bitter relatively quickly, so more critical. I think! 🤔
