I've said everything I needed to say about that omurice guy. Actually what I said in a comment under Roger's youtube section and Roger going out to this place weeks later is a massive coincidence. Either he got triggered by what I said which is true or its just a massive coincidence.

It's kinda the Japanese "thing"...find one thing to do....then do it to perfection and better than anyone else in the world. Italians are driven by love and passion, the French by infatuation and obsession and th Japanese by purity and perfection.

Best part about Chef Motokichi's Omurice is: That's just the most famous dish. His store's best dish(and where he gets the demi glace for the omurice from) is his beef tongue stew. That demi glace is stewed for *96 HOURS* .

Japanese Omelets are sort of a distant cousin of the French omelet. If I remember, it emerged post-WW2 when Japan began increasing their interactions with western nations and adapting various dishes. A lot of their dishes are very much based on their "idea" of what a dish might be over reality. "American hamburger" in Japan for instance is actually more like a hamburger steak. Omurice is very much French influence on top of existing fried rice recipes, so admittedly the changes from a French omelet are less "incorrect" and more just how this method evolved.

In most countries, it would be "I've been cooking (in general) for 40+ years." In Japan it's "I've been cooking this one specific dish for 40+ years." Very much the "practice 1,000 punches once vs 1 punch 1,000" times mentality.

If I remember correctly omurice has some roots in western cooking. Japanese people in the late 19th century saw westerners come to the island to engage in trade and were impressed by how big a lot of them were. They studied what the guys ate hence the omelette and adapted it to Japanese palettes. I got that explanation from a Japanese chef on KZbin but it's been a few years since I've seen it and I'm not going to rewatch it.
