Aaron and Claire's cookbook arrived today. Honestly, it is far better than I expected. It's very well made with beautiful photography and a wide range of recipes. If you like this channel I think you will enjoy this book it certainly saves me from having to go back and look up videos.

I've been practicing my knife and wok skills on your amazing recipes for months now, even with my limited abilities, my family is always well pleased! I don't know how I made it 40 years without trying Korean food, if I had only known we shared a love of garlic, green onion and spicy heat! Clair spoke to the added touch of acidity to the Chili Garlic Noodles. I think I'm going to try it with a lime squeeze. I'm so lucky to have the knife cut noodles available! Today I was really appreciating Claire's description of your dishes. She is so eloquent and describes all the attributes of the dish, not just the obvious ones. I can almost taste, smell and enjoy the mouthfeel right through KZbin! Happy New Year to you guys (and your fur baby, too!)

Aaron, You can easily soften palm sugar in the microwave (any carefully-administered source of heat will do this, actually). Then it can be crumbled or mashed without needing to grate it or pound it. Sincerely, A Random Thai Person

Hello from New York!! Santa Claus brought me your book and I read it cover to cover! I wanted to say how wonderful it is! There are no repeats from your videos, the photos are beautiful. The side comments from Claire are awesome! I also wanted to thank you for showing the package of the ingredients you use both in videos and in the book and not just a pretty bowl of the ingredient. It makes such a difference. I pause the video, take a screen shot and go to my local asian food store and it makes it much easier to find them. I've watched your videos for so long, made several recipes and I'm so happy for you both on this gorgeous book! Congratulations!!!

i went to thailand to learn the authentic pad thai, and i must say this is really very much authentic, and good with the alternatives as well, so ingredients are really hard to get even in Asia!

Alici / anchovies in a jar/ can in oil can be substitute for the dry shrimps. Not the same but it will still add an extra layers of umami in the finish dish.

Thank you for the great content! I tried the chili garlic noodle--but doubled the sugar and ginger, added sesame oil and left out the oyster sauce. I used fake beef instead of pork. It turned out SO yummy!! Thank you for introducing me to gochugaru!

If you don’t have any dark soy sauce, replace the sugar with dark brown sugar if you have it. The molasses in the brown sugar helps give you a slightly darker color and richer flavor.
