I agree. Like patty melts, just top grade patty, cheese, and zweated down onions in that melted cheese. Awesome deliciousness. Talkin bout aged cheese, that is amazing. 22 yrs. Something I found out. I recently began vacuum sealing my blocks of cheese after each use and putting back in the fridge. NO MORE molded cheese. Vacuum sealed will keep it like new right on. Again, Great Burger.

Looks delicious. Chuck tender, spare beef fat you saved from trimmings, beef short rib; mostly chuck tender though. Cube it, throw it in a freezer for 20 mins or so, pulse in the processor, garlic powder, onion powder, salt, pepper, red pepper flakes, possibly some Chicago seasoning. Cook it as a smash burger and there you have it. Probably just a wee bit cheaper than NY strip burgers.

I absolutely love a sharp cheddar and the sharpness was through the roof on this cheese. It was melting from the heat of my hands, but yet it had little crunchy crystals that was amazing. Very expensive but worth it to just experience it. Thanks for watching Jaxx! Cheers 🥂 🧀

K I S S at it best! Pricey cheese!! Out of reach of a lot of folks but that meat grinder is the key Russ as you well know. Get a grinder and you will never buy pre-ground beef again!! I know I don't!! Cook on sir!!
@SmokyRibsBBQ4 жыл бұрын
Yeah it's pricey for sure, but hey, got to splurge every now and then, and I'm a huge lover of cheese, especially a sharp cheddar and this did not let me down. Grinding your own burger meat is way better than store bought. At least you know where it comes from, and you can adjust the lean to fat to your own liking.

So when I was long hauling I would pass through Wisconsin a few times a year and stop by my favorite cheese shop. Pickup $2 or $300 worth of cheese. FYI, you can tell the difference for each year cheddar is aged. I would share some of the 5 year with some friends and family. But not the older cheese. I often would Pickup a few pounds of 12 year. A couple of times they had 13. But I never saw anything older than that. When you said you acquired 22 year aged cheddar I was blown away. I'm sitting here trying to guess just how amazing it would be. Honestly I would have had trouble putting that on the burger it would have been so good. Great cook. Hey I was curious what cooker you did that on. I think I'm overdue for placing a cheese order from that shop I mentioned. Hmmmm, cheese 🧀 😋. Rus have a great day 🌞.
@SmokyRibsBBQ Жыл бұрын
I love aged cheddar and this 22 year old aged was spectacular! I need to see if I can still order it from Wisconsin cheese mart. Yeah I normally wouldn't put that expensive cheese on a burger, but it made for a decent video. The griddle is a cheap $99 Royal Gourmet from Amazon. Nothing special but works good.
@victorbenner539 Жыл бұрын
@Smoky Ribs BBQ hey thanks for the info. Hmmm, I need to check them out, 22 year aged cheddar, wow. I've been considering to start aging my own cheddar. The folks where I have gotten mine in Wisconsin told me they have some customers who have dedicated refrigerators just for aging cheese. They said its important to use hot wax to cover the cheese for aging. It allows the cheese to breathe. I noticed a off looking texture on the exterior portion of your cheese. Did it have a plastic type of wrap on it? Sometimes when the cheese gets cut from the block/wheel they wrap with plastic wrap figuring it will be consumed quickly. But long term should always be wax. Sorry I got a little long here. 😱😁🧀
