I have struggled to make this dish at home as well. Getting the noodles cooked right is the biggest hurdle. You tried until you succeeded, good for you! Thanks for sharing! 😊

The Thai flat noodles usually coated with oil so we don't have the same problem as you. But I think you nail it from the first time though.

I don’t “cook” the noodles first- I just soak them in cold water beforehand so they get soft. Then when you put them into the wok cover with a lid, and the moisture on them, along with steam emitted from the greens (and bean sprouts) and the sauce, cooks them to perfection!
