What's the brand of tomatoe paste you used? I think tomatoe paste is different from tomatoes puree found in tubes

Hi, thanks for asking, I mainly use KTC brand for my tomato paste. They mainly come in big pots which is ideal for restaurants/takeaway so for home use other brands, smaller pots as long as it’s double concentrated tomato paste it will work well with this recipe. Thanks again and enjoy 🙌🙌

Roughly, how long would the garlic ginger paste, puree and onions keep in the fridge after. Thanks in advance.

Great question and thanks. Tomato purée and ginger garlic paste I would say a 4-5 days max however you can put in ice cube trays and just freeze them. Onions in fridge maybe 2-3 days. You can add fresh onions when cooking just a ensure they have softened before adding all other ingredients. Hope this helps. 😀

@@TheBengaliCook Yeh - jsut getting into it more. I made some service onion and my own ginger / garlic last week and froze it. I'll do the same with your tomato paste / puree and freeze it in larger ice cube trays.

Hey thanks so much and really appreciate it. The pans and spoons can be bought from most Asian shop, Amazon (link in description to help) if I remember right the pan is 24 or 26in. Enjoy and thanks again 🙌🙌

Hi thanks for asking, you can put the in the fridge air tight container should be good for 3-4 days or you can freeze them in ice cube trays/similar (ginger garlic paste and tomato purée), personally I would make the onions ons the same day as it doesn’t take long. Hi, why is there a need to cook out the tomato with garlic etc when they get added at the beginning of most curries after the tomato anyway?

Hi great question, tbh it adds more flavour to the tomato purée and then when added to the curry it adds a another layer of flavour to it. Hope this helps.

I've never seen coriander stalks added to ginger/garlic paste before but I'm definitely going to be doing that from now on, I know it will give it a fantastic flavour! Also could you tell me what blender you are using, please? I hate my mini chopper thing and want one like this. Thanks! :)

@@chippy3350 In the Imperial measurement system, 1 tablespoon is 1/2 ounce or 3 teaspoons. Standard measures help to avoid errors due to different measuring utensils, i.e., a household flatware drawer "teaspoon", which can vary substantially in size. The chef spoon used to measure the tomato paste is a fairly common restaurant tool but it, too, can vary in size or volume. The video provides the viewer a pretty accurate idea of how much is being used and, in the case of tomato paste, a tablespoon or two is not going to make that much difference. However, there is a HUGE difference between a teaspoon and a tablespoon of cinnamon. That is why standard measurements are essential for new or beginner cooks who are still developing the skill of judgement, which comes from experience.

At home we don’t use base gravy to cook Curries, (I personally do just for my videos for here once a week or so). How many curries will those service onions make and the tomato puree?

Peter Carter Service onion should give you about 3 curries (depends what curries your making as for example a Bhuna dish will require more than others) and tomato purée around around 10. Hope this helps mate.

I've still to get round to making the tomato paste how do you store it and how long does it store for please chef.

@@royalnag6690 About three days but an freezer in ice cube tray then when frozen take out and store in a bag or tupperware but separate with grease proof paper to prevent sticking together. With freezing you can make a large batch :-)

There’s no excuse for buying garlic and ginger already prepared. It stinks of preservatives and tastes minging. This really is the only way to do it. Everyone should have a blender and coffee grinder in their BIR arsenal!

Absolutely agree mate, the flavours and aroma are completely differently, if I need a small batch for home cooking I use a pestle and mortar - I find the garlic and ginger flavours are so much nicer 😀

I can't understand why you've got spices in those small expensive jars from the supermarket when we all know the way to go are the 100g packets (East End being my preferred supplier) from your local Asian shop for a fraction of the cost

Hey thanks so for asking and apologies for the sound quality. Ingredients for the service onion was, one medium size onion, 1/4tsp (approx) turmeric powder and pinch of fenugreek leaves. Few minutes to caramelise the onions. Hope this helps and enjoy 🙌
